Cooking Instructions
Step 1
Begin by preparing all your ingredients meticulously for delicious Shrimp and Pepper Fritters. For the fresh shrimp, ensure they are thoroughly peeled and deveined.
Step 2
Finely dice the red and yellow bell peppers. These will add vibrant color and a delightful crunch. Aim for a very small, uniform dice.
Step 3
Finely mince the prepared fresh shrimp using the side of a knife or a cleaver. In a small bowl, combine the minced shrimp with the marinade ingredients: ginger wine (or cooking sake), minced garlic, and a pinch of black pepper. Gently mix and let it marinate for a short while. This step helps to remove any fishy odor and enhances the shrimp’s flavor.
Step 4
To the marinated shrimp, add the finely diced red and yellow bell peppers. Then, incorporate the batter ingredients: 2 tablespoons of starch powder, a pinch of salt, a pinch of black pepper, and 0.5 tablespoon of sesame oil for added richness. Mix everything thoroughly until well combined. Your shrimp batter is now ready!
Step 5
Wash the Korean green peppers (Asagi peppers) and cut them in half lengthwise. Using a spoon or a small utensil, carefully scrape out the seeds and pith from the inside of each pepper half. Removing the seeds will make the peppers more tender and easier to fill.
Step 6
Crack the two large eggs into a bowl. Add 1 tablespoon of cooking wine to help eliminate any eggy smell and add a touch of tenderness. Whisk the eggs thoroughly with a fork or whisk until smooth and well combined, creating a bright yellow egg wash.
Step 7
Lightly coat the hollowed-out inside of each pepper half with a bit of starch powder. This will help the shrimp batter adhere better. Carefully spoon the prepared shrimp batter into each pepper half, filling them generously. Lightly dust the outside of the filled peppers with more starch powder, then dip them into the prepared egg wash, ensuring they are fully coated. This creates the final layer for frying.
Step 8
Heat a generous amount of cooking oil in a frying pan over medium heat. Carefully place the egg-coated shrimp and pepper halves into the hot oil. Fry them, turning occasionally, until they are golden brown and crispy on both sides. Be mindful of the heat to prevent burning.
Step 9
Your delicious Shrimp and Pepper Fritters are now beautifully golden brown and ready to be served! They are best enjoyed while warm.
Step 10
Using fresh, crisp Korean green peppers results in a wonderful bite with a pleasant subtle heat, which perfectly complements the sweet and savory flavor of the shrimp. It’s truly a captivating and irresistible combination!
