A Delicious and Economical Side Dish: Enoki Mushroom Stir-fry

Today, I’m excited to share a wonderfully simple yet incredibly flavorful recipe for ‘Enoki Mushroom Stir-fry with Sesame Oil.’ Enoki mushrooms are known for their delightful chewy texture and rich umami, and they are very affordable, usually costing between 900-1300 KRW. When combined with the nutty aroma of sesame oil, this dish becomes an irresistible rice companion! You can whip this up in under 5 minutes with just a few basic ingredients, making it a perfect addition to your dinner table.
Main Ingredient- 1 pack Enoki mushrooms (approx. 50g)
Optional Ingredient- 1/4 Cheongyang chili pepper (approx. 4g, adjust to spice preference)
Seasoning- 1 tsp Sesame oil

- 5g Cooking oil (approx. 1/2 Tbsp)

Cooking Instructions
Step 1
Begin by trimming the root base of the enoki mushrooms with a knife. Then, gently separate the mushroom caps or rinse them lightly under running water, patting them dry. This step ensures any dirt or debris is thoroughly cleaned from between the mushroom strands.
Step 2
Heat a frying pan over medium heat and add about 1/2 tablespoon of cooking oil. Swirl the pan gently to coat the surface evenly. Cooking over medium heat, rather than high heat, prevents the mushrooms from burning and ensures they cook to a tender consistency.
Step 3
If you’re using Cheongyang chili pepper, remove the seeds, mince it finely, and add it to the pan. Stir-fry quickly to release its fragrance. About 1/4 of a pepper is usually sufficient, but feel free to add more if you enjoy a spicier kick. (Note: I found that about 8g was a bit too spicy for me!)
Step 4
Add the prepared enoki mushrooms to the frying pan. If the mushrooms are clumped together, gently separate them as you stir-fry to ensure even cooking.
Step 5
Now it’s time to season with salt. Instead of adding the entire teaspoon of salt at once, start with a small amount and taste as you go. Enoki mushrooms release a lot of moisture and cook quickly, so it’s crucial to adjust the seasoning towards the end. Be careful not to oversalt.
Step 6
Once the enoki mushrooms have wilted and are tender, turn off the heat. Finally, drizzle in 1 teaspoon of sesame oil for a rich, nutty aroma and toss gently to combine. This delicious stir-fry is ready to be served! It’s wonderful spooned over hot rice or enjoyed as a side dish with your favorite meals.
