I had some pre-cooked siraegi (dried radish greens) on hand, so I decided to make siraegi rice, a dish excellent for boosting winter immunity and fortifying the body during seasonal transitions. Siraegi is incredibly nutritious, packed with vitamins, minerals, and dietary fiber, making it beneficial for gut health and even helping to prevent colds. Although I originally planned to use it in a braised fish dish, the quantity was ample, so I opted to prepare a simple siraegi rice using an electric pressure cooker. I skipped the step of stir-frying the siraegi with oil or seasoning it separately. Even without these additions, the natural savory and deep aroma of the siraegi infuses the rice, creating a delightful flavor that makes the rice itself incredibly delicious. Main Ingredients
  • 200g cooked siraegi (dried radish greens)
  • 5 cups white rice

Seasoning Sauce Ingredients
  • 2 Tbsp soy sauce
  • 2 Tbsp natural seasoning broth
  • 1/2 red chili pepper
  • 1 green chili pepper
  • 1 tsp minced garlic
  • 1 tsp chopped green onion
  • 1 drop sesame oil
  • A pinch of toasted sesame seeds
  • 1 tsp vinegar

Cooking Instructions

Step 1

First, rinse the pre-cooked siraegi about 3 times until thoroughly clean. Cut the rinsed siraegi into bite-sized pieces, approximately 2-3 cm in length. Cutting it into manageable lengths will ensure the rice is cooked evenly and is easy to eat.

Step 2

I used freshly harvested rice from 2019. Since it’s new rice, it’s best to wash it gently and thoroughly. Rinse the rice 2-3 times softly. For the final rinse, leave a small amount of water in the bowl, as this will aid in cooking a more delicious batch of rice. Soaking the rice for about 10-20 minutes will result in softer, chewier grains.

Step 3

Transfer the soaked rice to your pressure cooker. Layer the drained and prepared siraegi on top of the rice. When adding water, use slightly less than you normally would for plain rice. Siraegi releases its own moisture during cooking, so too much water can make the rice mushy.

Step 4

Select the ‘Nutrition Rice’ or ‘White Rice’ setting on your electric pressure cooker. This method will gently cook the rice, allowing the unique savory and earthy aroma of the siraegi to subtly infuse every grain. The resulting siraegi rice is wonderfully fragrant and flavorful. I chose not to stir-fry the siraegi separately with oil or salt. This way, the rice stays delicious even after a few days and allows you to fully appreciate the pure taste of the siraegi. Freshly cooked siraegi rice is delicious on its own!

Step 5

Once the rice is cooked, gently fluff it with a rice paddle, ensuring the siraegi is evenly distributed throughout the grains. You can serve the rice with the prepared seasoning sauce, or enjoy it without. It pairs wonderfully with salty side dishes like kimchi or other banchan.
