Ingredients
- 1 bunch fresh scallions (dalrae)
- 2 cups smoked anchovy broth
- 3 Tbsp soy sauce
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp minced garlic
- 1 red chili pepper
- 1 green chili pepper
- 2 Tbsp chopped scallion (from regular green onions)
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Begin by thoroughly washing the fresh scallions (dalrae) under running water to remove any dirt or debris. After washing, drain them well in a colander. Excess water can dilute the flavor, so ensure they are as dry as possible.
Step 2
In a bowl, prepare the minced garlic (1 Tbsp) and chopped green onions (2 Tbsp). Finely mince the red and green chili peppers (seeds removed) to add a pleasant heat. If you prefer sliced garlic, you can add a few slices as well.

Chop the washed dalrae into pieces roughly the same size as the minced chili peppers and green onions (about 0.5 cm). Avoid chopping them too finely to preserve their delicate texture and unique flavor.

Add the chopped dalrae, minced garlic, chopped green onions, and minced chili peppers to the bowl. Stir in the soy sauce (3 Tbsp) and toasted sesame seeds (1 tsp).

Pour in the smoked anchovy broth (2 cups) for a deep, savory base. Season the sauce to be slightly salty, as it will be mixed with rice. If the flavor needs adjustment, add more soy sauce to reach your desired taste. If smoked anchovy broth is unavailable, a broth made from kelp or regular anchovies can be used as a substitute.
