Step 1
First, cut the potatoes into bite-sized cubes, about 2-3 cm. To remove excess starch and prevent them from breaking apart during cooking, soak the cubed potatoes in cold water for about 10 minutes, or rinse them thoroughly under running water. You can also add a pinch of coarse salt to the soaking water for better results.

Prepare a deep pan or pot. Combine all the braising sauce ingredients: soy sauce, corn syrup, and cooking oil, into the pan. Stir them well to mix.

Add the drained potato cubes to the pan with the sauce. Gently shake the pan or use a spatula to toss the potatoes, ensuring each piece is coated evenly with the seasoning. This step helps the flavor penetrate the potatoes beautifully.

Pour in enough water to generously cover about two-thirds of the potatoes. Avoid adding too much water, as it will extend the cooking time and dilute the sauce. Too little water might cause the potatoes to stick and burn.
