Soy-Glazed Chicken Recipe
Introducing a deliciously savory and sweet soy-glazed chicken that everyone in the family will love. This versatile sauce can also be used for pork ribs or other meats! Make this irresistible dish, perfect as a side for rice or a tasty appetizer with drinks.
Main Ingredients- 1 whole chicken (cleaned and prepared)
- 1 large leek (cut into large pieces)
- 10 whole garlic cloves
- 1 onion (cut into large pieces)
Perfect Soy Sauce Glaze- 5 Tbsp soy sauce
- 500ml water
- 2 Tbsp cooking wine (mirin or sake)
- 1.5 Tbsp sugar
- 2 Tbsp corn syrup (or oligodang/rice syrup)
- 1 Tbsp plum extract
- 0.5 Tbsp caramel sauce (optional, adds color and depth)
- 0.5 tsp black pepper
- 0.5 tsp ginger powder (or minced ginger)
- 3 bay leaves
- 1 Tbsp sesame oil
- 5 Tbsp soy sauce
- 500ml water
- 2 Tbsp cooking wine (mirin or sake)
- 1.5 Tbsp sugar
- 2 Tbsp corn syrup (or oligodang/rice syrup)
- 1 Tbsp plum extract
- 0.5 Tbsp caramel sauce (optional, adds color and depth)
- 0.5 tsp black pepper
- 0.5 tsp ginger powder (or minced ginger)
- 3 bay leaves
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Rinse the chicken thoroughly under running water. Trim any excess fat or the tail end for a cleaner result.
Step 2
In a large pot, add enough water (not from the ingredient list) to cover the chicken. Add 3 whole garlic cloves, a pinch of whole peppercorns, and 3 bay leaves for blanching. Bring the water to a boil, then add the prepared chicken and blanch for about 2-3 minutes. This step helps remove any gamey odor and impurities.
Step 3
Transfer the blanched chicken to cold water and rinse it carefully. Gently remove any remaining impurities, such as skin fat or blood, to ensure a clean and refined taste in your final dish.
Step 4
Now, let’s make the delicious glaze! In a pot, first add 500ml of water. Then, add 5 Tbsp soy sauce, 2 Tbsp cooking wine, 1.5 Tbsp sugar, 2 Tbsp corn syrup, 1 Tbsp plum extract, 0.5 Tbsp caramel sauce (optional), 0.5 tsp black pepper, and 0.5 tsp ginger powder. Stir well to combine all the sauce ingredients.
Step 5
Add the blanched and rinsed chicken to the prepared sauce and bring it to a boil over high heat. Once the sauce is boiling, reduce the heat to medium. When the chicken is partially cooked and the sauce has started to reduce slightly, add the remaining sauce mixture (use about 2/3 of the total amount initially). Dividing the sauce helps the chicken absorb the flavors more effectively!
Step 6
Simmer over medium-low heat for at least 30 minutes, or until the sauce has thickened and coated the chicken beautifully. Flip the chicken pieces occasionally to ensure even glazing. Be mindful to prevent the sauce from sticking to the bottom of the pot.
Step 7
Once the chicken is perfectly glazed, turn off the heat. Arrange the chopped fresh onion on a serving plate, and place the glazed chicken on top. Your delicious soy-glazed chicken is ready to be served! Enjoy it with a warm bowl of rice.
