Cooking Instructions
Step 1
First, cut the dried shredded squid (Jinmi-chae) into bite-sized pieces, about 5-7 cm long. In a bowl, combine 200g of the squid, 4 Tbsp of water, and 4 Tbsp of mayonnaise. Gently mix with your hands until well combined. This step is crucial for making the squid tender and preventing it from becoming tough when stir-fried. After mixing to ensure the seasoning is evenly distributed, cover the bowl with plastic wrap or a lid, and microwave for 2 minutes. (Adjust cooking time based on your microwave’s power.)
Step 2
While the squid is in the microwave, let’s prepare the sauce. In a small pot or pan, combine 5 Tbsp of soy sauce, 1 Tbsp of sugar, 2 Tbsp of oligosaccharide, and a pinch of black pepper. Heat over medium-low heat and bring to a simmer. Cook until the sugar has completely dissolved and the sauce has slightly thickened. Be careful not to overcook it!
Step 3
