Having some well-preserved side dishes is essential for peace of mind! This Jinmichae Soy-Glazed Stir-Fry is perfect for making ahead and lasts well. Let’s make it easily!
Main Ingredients- 200g Jinmichae (dried shredded squid)
- 1 Tbsp Peanut Powder
Seasoning Ingredients- 1 Tbsp Soy Sauce
- 1.5 Tbsp Oligosaccharide (or corn syrup)
- 1/2 Tbsp Mirin (cooking wine)
- 1 Tbsp Minced Garlic
- 3 Tbsp Mayonnaise

Cooking Instructions
Step 1
Trim any tough ends from the Jinmichae with scissors and cut it into 2-3 cm lengths for easy eating. Place in a bowl and soak in lukewarm water for about 5 minutes to soften. (Be careful not to soak for too long, as it can crumble or become mushy!)
Step 2
While the Jinmichae is soaking, prepare the sauce. In a separate bowl, combine 1 Tbsp soy sauce, 1.5 Tbsp oligosaccharide, 1/2 Tbsp mirin, 1 Tbsp minced garlic, and 3 Tbsp mayonnaise. Whisk well with a spoon or whisk until smooth and lump-free.
Step 3
Drain the softened Jinmichae and gently squeeze out as much water as possible with your hands. Add the Jinmichae to the bowl with the sauce and mix thoroughly, gently massaging to coat each strand. Cover with plastic wrap or a lid and let it marinate at room temperature for 30 minutes to allow the flavors to fully penetrate.
Step 4
Heat a pan over medium heat. Add the marinated Jinmichae and stir-fry for about 3 minutes. The key is to not overcook it; stir-fry just until the sauce thickens slightly and becomes glossy. Overcooking will make the Jinmichae tough and chewy.
Step 5
Just before turning off the heat, stir in 1 Tbsp peanut powder and a sprinkle of sesame seeds for added nuttiness. This completes your savory and moist Jinmichae stir-fry! It’s delicious served warm, or chilled as a perfect side dish. Enjoy!
