Main Ingredients
- Water (enough to fill a bowl with ice water)
- 1/2 onion
- Pork belly (as much as desired)
- 1 stalk green onion
- 5 cloves garlic
- 1 bowl of cooked rice
- 1 hard-boiled egg
- 1 raw egg (optional)
- A little cooking oil
Special Soy Glaze
- 2 soju cups water
- 1 soju cup soy sauce
- 0.5 soju cup sugar
- 0.5 soju cup cooking wine (mirin or cheongju)
- 2 soju cups water
- 1 soju cup soy sauce
- 0.5 soju cup sugar
- 0.5 soju cup cooking wine (mirin or cheongju)
Cooking Instructions
Step 1
First, thinly slice half an onion. Soaking the sliced onion in cold (ice) water for a while will enhance its crispiness and reduce its pungency, making it even more delicious when served on top of the rice bowl.
Step 2
Lightly grease a frying pan with cooking oil and heat over medium heat. Place the pork belly in the pan and sear all sides until golden brown and crispy. Searing the exterior well helps to lock in the juices and add flavor.
Step 3
Once the pork belly is nicely browned, add the roughly chopped green onion and whole garlic cloves. Sauté until fragrant. The aromatic flavors of the green onion and garlic will meld with the pork belly, creating a deeper taste.
Step 4
Now it’s time to make the delicious soy glaze. Pour in 2 cups of water, 1 cup of soy sauce, 0.5 cup of sugar, and 0.5 cup of cooking wine. Once the sauce comes to a boil, flip the pork belly pieces back and forth to ensure they are evenly coated and simmered in the sauce. Success is when the sauce thickens and the pork belly develops a glossy, dark sheen. Be mindful of the heat to prevent burning.
Step 5
Cut the simmered pork belly into bite-sized pieces. This makes it easier to eat when served on the rice bowl and allows the sauce to penetrate better, enhancing the flavor.
Step 6
Now, let’s assemble the magnificent rice bowl! Place a generous portion of freshly cooked, warm rice in a bowl. Top with the drained, crisp onion slices. Arrange the bite-sized pork belly and whole garlic cloves attractively over the rice. Add a hard-boiled egg and a raw egg (if you have a fresh egg, you can mix it into the rice). Don’t forget to drizzle the remaining delicious soy sauce from the pan over everything. Finally, sprinkle some sesame seeds for a nutty aroma. (Adjust the amount of sauce and sesame seeds to your preference.) Mix everything together and enjoy the fantastic flavor!
