Pork is a staple on many tables, isn’t it? It’s often affordable and delicious, making it a frequent purchase. Today, I’ve marinated pork hind leg slices in a delightful soy sauce mixture and stir-fried them. This dish is a true rice-lover’s dream!
Main Ingredients- 300g Pork Hind Leg (sliced into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- 5cm Carrot (julienned)
- 1 Scallion (diagonally sliced)
Flavorful Soy Marinade- 5 Tbsp Soy Sauce (for rich umami)
- 2 Tbsp Mirin (to remove odor and enhance flavor)
- 2 Tbsp Plum Extract (for subtle sweetness and shine)
- 1 Tbsp Oligosaccharide (for a glossy and tender texture)
- 1 Tbsp Sesame Oil (for nutty aroma)
- 2 Pinches Black Pepper (to refine the taste)
- 5 Tbsp Soy Sauce (for rich umami)

Cooking Instructions
Step 1
Marinate the Pork: Start by placing 300g of pork hind leg slices into a bowl. Add 5 Tbsp soy sauce, 2 Tbsp mirin, 2 Tbsp plum extract, 1 Tbsp oligosaccharide, 1 Tbsp sesame oil, and 2 pinches of black pepper. Gently mix with your hands, ensuring the marinade coats the pork evenly. Let it marinate for about 15 minutes. This helps tenderize the meat and allows the flavors to penetrate deeply.
Step 2
Prepare the Vegetables: While the pork is marinating, let’s get the vegetables ready. Slice the scallion diagonally into bite-sized pieces. Peel and thinly slice the half onion. Peel and julienne the 5cm carrot. Preparing the vegetables now ensures everything is ready to go for stir-frying.
Step 3
First Stir-Fry of the Pork: Heat a pan over medium heat. Add the marinated pork slices and begin to stir-fry. Don’t cook the pork completely yet, as you’ll be adding vegetables later. Stir-fry until the pork is about halfway cooked, meaning it’s no longer pink on the outside but not fully cooked through. This step helps lock in the juices and meld with the marinade.
Step 4
Add Vegetables and Finish Cooking: Once the pork is halfway cooked, add the prepared vegetables (onion, carrot, and scallion) to the pan. Stir everything together and continue to stir-fry over medium-high heat until the vegetables are tender-crisp and the pork is fully cooked. Mix well to ensure everything is evenly coated and cooked.
