Instead of the usual spicy squid stir-fry (ojingeo duruchigi), today we’re making a mild and savory soy-glazed squid stir-fry. The chewy squid, crisp vegetables, and delicious soy sauce seasoning come together to create a dish that will have you finishing a bowl of rice in no time. It’s simple to make, so even beginner cooks can achieve great results!

  • 1 Squid (body portion, approx. 200g)
  • 1/2 Green Onion
  • 1 Onion (small)
  • 1/2 Zucchini
  • 1 Korean Chili Pepper (optional)

Seasoning Ingredients

  • 2.5 Tbsp Soy Sauce
  • 0.5 Tbsp Oyster Sauce (if unavailable, substitute with 3 Tbsp soy sauce)
  • 1 Tbsp Oligodang (Korean corn syrup) (adjust sweetness to taste)
  • 0.5 Tbsp Sugar (adjust sweetness to taste)
  • 1 Tbsp Minced Garlic

Cooking Instructions

First, clean and prepare the squid. Slice it into bite-sized pieces (about 1.5 cm thick). It’s best to cut them slightly thick, as they will shrink when cooked.

Next, prepare the vegetables. Slice the green onion diagonally about 0.5 cm thick. Slice the onion into strips about 0.5 cm thick. Cut the zucchini into half-moon shapes or lengthwise, about 0.5 cm thick (you can omit the zucchini if you prefer). Finely chop the Korean chili pepper. (Omit or adjust the amount if you don’t like spicy food).

Now, let’s make the delicious sauce. In a bowl, combine 2.5 Tbsp soy sauce, 0.5 Tbsp oyster sauce (or 3 Tbsp soy sauce if you don’t have oyster sauce), 1 Tbsp oligodang, 0.5 Tbsp sugar, and 1 Tbsp minced garlic. Mix well until the seasoning is evenly blended. Feel free to adjust the amount of oligodang and sugar to your preference.

Heat a pan over medium heat and add a little cooking oil. Add the green onions and onions first and stir-fry. You’ll start to smell a wonderful aroma as the vegetables become glossy.

Once the onions and green onions are somewhat translucent, add the zucchini and stir-fry together. Cook until the zucchini is slightly tender.
