When the weather gets hot, I find myself wanting to eat anything simply prepared. Even though I know I shouldn’t! Haha. Today, it’s another simple dish… Soy Sauce Bibim Guksu. Since it’s rice noodles, it’s even better! Haha.

Main Ingredients
  • Rice Noodles (Somen) 400g

Seasoning & Toppings
  • 8 sheets of perilla leaves, thinly julienned
  • 3 Tbsp Perilla Oil (Deulgireum)
  • 2 Tbsp Soy Sauce (Jinganjang)
  • 1/2 Tbsp Sesame Seeds
  • 6 sheets of seasoned seaweed (Japchae Kim)
  • broken into small pieces

Cooking Instructions

Step 1

Bring a large pot of water to a rolling boil. Add 400g of rice noodles and cook for precisely 3 minutes. Rice noodles cook very quickly, so be sure to stick to this cooking time.

Step 2

As soon as the noodles begin to boil up, add about 1/3 cup of cold water to the pot and bring it back to a boil. Repeat this process of adding cold water two more times (for a total of three additions of cold water). This step is the secret to cooking the noodles perfectly to a chewy, al dente texture.

Step 3

Once the noodles are cooked, drain them in a colander and rinse thoroughly under cold running water to remove excess starch. Drain them well, then neatly arrange the noodles into portions (like little nests) to prevent them from sticking together. (Note: The recipe is for 4 servings, but you can adjust it to 3 servings depending on your appetite.)

Step 4

Place the portioned rice noodles into a large mixing bowl. Add the thinly julienned perilla leaves (8 sheets), fragrant perilla oil (3 Tbsp), savory soy sauce (2 Tbsp), and sesame seeds (1/2 Tbsp). Gently mix everything together with your hands, massaging the seasonings into the noodles until well combined. (Tip: You can adjust the amount of soy sauce or perilla oil to your preference to match your taste.)
