Super Easy Soy Sauce Braised Chicken: A Deliciously Sweet & Salty Dish Even Kids Love!
Chicken dishes are always a hit for family gatherings! Especially when prepared with a mildly sweet and savory soy sauce glaze, children absolutely adore it. Here’s a super simple Jjimdak recipe that’s so satisfying, it can be enjoyed with just a bowl of rice, no other side dishes needed. Enjoy a delightful mealtime!
Main Ingredients- 1 (750g) pack of chicken for braising (cut for stir-fry)
- 1 medium potato
- 2/3 carrot
- 1 onion
- 2/3 stalk of green onion
- A handful of rice cakes (tteok)
Braising Sauce- 300ml water
- 5-6 Tbsp soy sauce
- 1-2 Tbsp unrefined sugar (like brown sugar)
- 1 Tbsp minced garlic
- 1/2 tsp minced ginger
- 300ml water

Cooking Instructions
Step 1
First, prepare the vegetables. Peel the potato and onion, then cut them into bite-sized cubes. Chop the carrot into similar-sized pieces. Slice the green onion diagonally into large pieces.

Now, let’s make the delicious braising sauce. In a bowl, combine 300ml of water, 5-6 tablespoons of soy sauce, 1-2 tablespoons of unrefined sugar, 1 tablespoon of minced garlic, and 1/2 teaspoon of minced ginger. Stir well until everything is incorporated. You can adjust the sugar amount to your preference.
Step 3
Rinse the chicken pieces for braising thoroughly under running water. Remove any visible giblets or excess fatty skin. Pay special attention to the cut surfaces, washing them carefully to get rid of any small bone fragments or bone dust. This ensures a cleaner final dish.
Step 4
Bring a pot of water to a rolling boil. Once boiling, add the cleaned chicken pieces and blanch them for about 1 minute and 30 seconds. This initial blanching step helps remove any remaining impurities from the chicken.

After blanching, drain the chicken and rinse it under cold running water to wash away any loosened impurities. To help the sauce penetrate better, you can make a few small slits in the chicken pieces. This will make the Jjimdak even more flavorful!

It’s time to start the braising process. Place the blanched chicken, along with the cubed potatoes, carrots, and onions, into a pot. Pour the prepared soy sauce mixture over the ingredients. Bring to a simmer over medium-low heat.

While the Jjimdak is simmering, add the rice cakes and the sliced green onions. Feel free to add other ingredients like sliced perilla leaves or chili peppers according to your taste for an even richer flavor.

Cover the pot and let it simmer gently for about 25 minutes, or until all the ingredients are tender and the sauce has thickened slightly. Stir occasionally to ensure even cooking.
