Main Ingredients- 160g Dried Shredded Squids (White variety)
Seasoning Ingredients- 1 Tbsp Olive Oil
- 2 Tbsp Savory Soy Sauce (Mat-ganjang)
- 2 Tbsp Mirin (Rice Wine)
- 1 Tbsp Minced Garlic
- 1.5 Tbsp Oligosaccharide
- 1 Tbsp Sugar
- 1 Tbsp Mayonnaise
- 1 Tbsp Black Sesame Seeds
- 1 Tbsp Olive Oil
- 2 Tbsp Savory Soy Sauce (Mat-ganjang)
- 2 Tbsp Mirin (Rice Wine)
- 1 Tbsp Minced Garlic
- 1.5 Tbsp Oligosaccharide
- 1 Tbsp Sugar
- 1 Tbsp Mayonnaise
- 1 Tbsp Black Sesame Seeds
Cooking Instructions
Step 1
While you can use the dried shredded squids as they are, for a softer texture, I like to briefly soak them in water for about 5 minutes, then gently squeeze out all the excess water. This step makes them wonderfully tender and moist. Once prepared, cut the squids into bite-sized pieces, about 2-3 cm long, using scissors.
Step 2
In a small pot or pan, combine 1 Tbsp olive oil, 2 Tbsp savory soy sauce, 1 Tbsp minced garlic, 2 Tbsp mirin, 1.5 Tbsp oligosaccharide, and 1 Tbsp sugar. Bring the mixture to a gentle simmer over medium-low heat. Let it bubble for about 1 minute after it starts simmering to dissolve the sugar and infuse the flavors.
Step 3
Add the prepared dried shredded squids to the simmering sauce. Using chopsticks or a spatula, gently stir and toss the squids to ensure they are evenly coated with the sauce. Continue to stir-fry for about 2-3 minutes, allowing the squids to absorb the delicious flavors.
Step 4
Once the squids have absorbed the sauce and taken on a nice color, add 1 Tbsp of mayonnaise. Quickly mix it in until well combined. The mayonnaise adds a wonderfully creamy and nutty depth to the dish. Turn off the heat immediately after mixing; overcooking can make the squids tough.
Step 5
Let the braised squids cool slightly before transferring them to a storage container. Sprinkle 1 Tbsp of black sesame seeds over the top for a visually appealing finish and an extra nutty crunch. Your chewy, savory, and delicious soy sauce braised dried shredded squids are ready to be enjoyed!
