Main Ingredients

  • Spaghetti noodles, for 2 servings (approx. 200g)
  • Broccoli, 1/4 head (cut into bite-sized florets)
  • Mini King Oyster Mushrooms, 2 (approx. 30g, thinly sliced)
  • Crab sticks, 2 (approx. 50g, shredded or sliced)
  • Green chili pepper, 1 (seeds removed and finely minced, adjust to spice preference)
  • Sliced cheese, 2 slices
  • Cherry tomatoes, 2 (halved, optional)

Sauce & Seasoning

  • Minced garlic, 1 Tbsp (15ml)
  • Butter, 1 piece (approx. 10g)
  • Soy sauce, 1 Tbsp (15ml)
  • Granulated sugar, 1 Tbsp (15ml)
  • Olive oil, a drizzle (about two turns of the pan)
  • Dried basil, a pinch (or black pepper if unavailable)
  • Salt, to taste (for adjusting seasoning)

Cooking Instructions

Bring a large pot of generously salted water to a rolling boil. Carefully spread the spaghetti noodles apart to prevent sticking as you add them to the boiling water. Cook for approximately 7 minutes, which is about 1 minute less than the package instructions. (This is because the pasta will finish cooking in the pan later.)

Drain the cooked spaghetti using a colander. Reserve about 1 cup of the pasta water; it will be useful for adjusting the sauce consistency later.

Prepare the vegetables and crab sticks for the pasta. Separate the broccoli into bite-sized florets, thinly slice the mini king oyster mushrooms, and shred or slice the crab sticks into manageable pieces.

Using a knife or scissors, shred the crab sticks lengthwise and slice the mushrooms thinly. For the broccoli, you can blanch the florets in boiling salted water for about 30 seconds, then rinse under cold water to enhance the vibrant green color and tenderize them (this step is optional).

Heat the pan over medium heat and add 1 piece of butter along with a drizzle of olive oil. Once the butter has melted, add the minced garlic and sauté until fragrant, being careful not to burn it. Once the aromatic garlic oil is ready, add the broccoli florets and sliced mushrooms. Stir-fry them until the mushrooms are slightly softened.

Add the drained spaghetti noodles to the pan with the sautéed vegetables. Toss gently to distribute the noodles evenly throughout the pan.

Sprinkle 1 Tbsp of soy sauce and 1 Tbsp of granulated sugar evenly over the noodles. Drizzle olive oil around the edges of the pan to help the sauce coat the pasta and ingredients.

Add the prepared shredded crab sticks and finely minced green chili pepper to the pan. If you prefer less heat, you can omit the chili or use a milder pepper. For an extra touch of flavor, sprinkle in some dried basil (or black pepper if basil is not available).

Reduce the heat to low and lay the 2 slices of cheese over the top of the spaghetti. As the cheese begins to melt, gently toss the noodles, vegetables, and crab sticks with tongs or chopsticks until everything is well combined and coated in the creamy, melted cheese sauce. Taste and add a tiny pinch of salt if needed to adjust the seasoning. Serve immediately while hot! You can also add halved cherry tomatoes for a touch of freshness.
