Noodle Ingredients- 200g Korean wheat somyeon (thin wheat noodles) (approx. 2 servings)
- 2 Tbsp soy sauce
- 2-3 Tbsp plum extract syrup (adjust to taste)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp perilla oil
- A pinch of ground sesame seeds
- A pinch of black sesame seeds
- A pinch of white sesame seeds (for garnish)
Refreshing Salad Ingredients- 1 handful assorted ssam vegetables (lettuce, perilla leaves, romaine, etc.)

- 1 Tbsp olive oil
- 1 Tbsp balsamic glaze or balsamic vinegar

Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil. Add the 200g of Korean wheat somyeon (thin wheat noodles). Once the water boils up, add about half a cup of cold water and repeat this process once or twice more. This technique helps achieve perfectly chewy noodles. After cooking, immediately rinse the noodles under cold running water to remove excess starch, then drain thoroughly in a colander.
Step 2
Gently press down on the drained noodles with your hands in the colander to squeeze out as much remaining water as possible. Ensuring the noodles are well-drained is crucial for the sauce to adhere properly and prevent sogginess.
Step 3
While the noodles are cooking, prepare the salad. Wash your assorted ssam vegetables thoroughly and make sure to pat them completely dry. Place the dried vegetables in a bowl, sprinkle with a pinch of salt and pepper, then drizzle with 1 Tbsp of olive oil. Toss gently to coat the vegetables evenly.
Step 4
In a separate bowl, prepare the soy sauce dressing. Combine 2 Tbsp soy sauce, 2-3 Tbsp plum extract syrup, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp perilla oil. Whisk until well combined. Add the well-drained noodles to this dressing. Sprinkle with ground sesame seeds, black sesame seeds, and white sesame seeds. Gently toss everything together until the noodles are evenly coated with the delicious sauce.
Step 5
