  • 2-3 stalks green onions
  • 1 chili pepper (optional)
  • 1/4 onion
  • 1/8 carrot
  • 3 eggs

First, let’s cut the Spam. Decide on your desired thickness; I cut mine about 1cm thick. Then, make small rectangular cuts within the Spam’s surface, creating little ‘pockets’. This helps the egg mixture soak in beautifully.

Finely chop the Spam (after making cuts) and the vegetables you’ll be using (green onions, chili pepper, onion, carrot). Chop the green onions finely. For the onion and carrot, dice them very small or grate them. If using chili peppers, remove the seeds before chopping to control the heat.

In a bowl, crack the 3 eggs. Add the chopped vegetables and just a tiny pinch of salt. Remember, Spam is already salty, so it’s important to taste and adjust the salt. Whisk the eggs until well combined and smooth using a fork or whisk.

Heat a lightly oiled pan over medium heat. Place the cut Spam slices in the pan and sear them until golden brown on both sides. This step enhances the Spam’s flavor and aroma. Be careful not to overcook them.

Keeping the seared Spam in the pan, carefully pour the egg mixture into the rectangular pockets you made in the Spam. Try to pour just enough so it doesn’t overflow the Spam’s edges. Cook over medium-low heat until the egg mixture is set. Covering the pan with a lid can help it cook faster.
