Savory Spam and Egg Roll: The Perfect Side for Kimchi Stew!

Instead of making cheese egg rolls every time, I decided to make a savory Spam and egg roll today! It’s incredibly delicious when paired with kimchi stew. The combination of fluffy eggs and salty Spam is truly a delight. This simple yet satisfying dish is perfect for a quick meal or a delightful snack. Let’s get started!
Main Ingredients
- 4 large eggs
- 1/2 can of Spam
- Cooking oil, as needed
Cooking Instructions
Step 1
Cut the Spam can in half. Then, cut one half into four thick pieces (about 1.5cm or 0.6 inches thick). We will use two of these pieces for the roll. You can save the remaining Spam for other dishes.
Step 2
Crack the 4 eggs into a clean bowl, remove the chalazae (the white, stringy bits), and whisk them gently until well combined. Heat a non-stick frying pan over low heat and lightly grease it with cooking oil. Pour about one-third of the whisked egg mixture into the pan, creating a thin layer. As the egg begins to set around the edges, place the two prepared Spam pieces side-by-side in the center of the cooked egg. Be mindful of the heat to prevent the egg from burning. Once the bottom layer of egg is cooked, carefully lift and fold the cooked egg over the Spam to enclose it, like making a French omelet.
Step 3
Continue to roll the egg and Spam tightly, creating a compact cylinder. It should look something like the picture, with the Spam nestled inside.
Step 4
Pour another third of the remaining egg mixture into the pan, ensuring it flows under and around the rolled portion. As this new layer of egg cooks and begins to set, gently roll the existing egg roll forward, encasing it in the fresh egg mixture. Repeat this process, adding the remaining egg mixture in stages and rolling the egg roll each time, until all the egg mixture has been used. Once the entire roll is formed, carefully turn it onto its side and cook for about a minute per side, gently pressing to ensure even browning and cooking through.
Step 5
Allow the finished Spam and egg roll to cool slightly for about 5 minutes before slicing. This helps the roll hold its shape and prevents it from crumbling. Slice the roll into bite-sized pieces (about 1.5-2 cm or 0.6-0.8 inches thick) for serving. You’ll notice clean, neat slices.
