Ingredients

  • 1 Onion (large)
  • 2 Potatoes
  • 2 Sweet Potatoes
  • 1 can (340g) Spam
  • 8 cubes concentrated curry roux (or 100g curry powder)
  • A little cooking oil

Cooking Instructions

First, peel and prepare 1 large onion. If you are using smaller onions, consider using two to achieve a balanced flavor. Dice the onion into approximately 1.5 cm cubes.

Peel and dice the 2 potatoes into similar sized cubes, about 1.5 cm. Potatoes add creaminess and make the curry more filling.

Peel and dice the 2 sweet potatoes to the same size as the potatoes and onions, approximately 1.5 cm cubes. The sweetness of the sweet potatoes will add another layer of flavor to your curry.

Open the can of Spam and dice it into 1.5 cm cubes, similar in size to the vegetables. You can often cook the Spam without adding extra oil, as it releases its own fat.

In a large pot, combine the diced onion, potatoes, and sweet potatoes. Add about 1-2 tablespoons of cooking oil and sauté over medium-low heat for about 5 minutes until the vegetables become translucent. Sautéing the vegetables deepens their flavor.

Once the vegetables are nicely sautéed, carefully pour in 2 liters (about 8 cups) of water. Bring the water to a boil over high heat.
