Savory Spam Kimchi Stew: The Ultimate Foolproof Recipe!

A Family Favorite! Delicious and Hearty Spam Kimchi Stew – Super Easy Golden Recipe

While often cooking for the kids, I found myself craving something warm and comforting for brunch. Kimchi stew came to mind! While delicious with any addition, today I decided to make a Spam Kimchi Stew. I’m sharing the golden recipe that guarantees a delicious outcome every time! It’s perfect for breakfast or lunch.

Stew Ingredients
  • 1 can Spam (340g)
  • 1 handful well-fermented kimchi (approx. 200g)
  • 1/2 stalk green onion
  • 1/4 onion
  • 1/2 pack enoki mushrooms
  • 3-4 cups rice water (or plain water)

Seasoning
  • 2 ladles kimchi brine
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sugar
  • 2 Tbsp soup soy sauce (guk-ganjang)

Cooking Instructions

Step 1

First, prepare all the ingredients for the stew. Open the Spam can and slice it into 1cm thick pieces. Chop the kimchi into bite-sized pieces, thinly slice the green onion diagonally, and shred the onion. Trim the base of the enoki mushrooms and separate them into strands. Tip: Briefly blanching the Spam in boiling water will remove impurities and excess oil, resulting in a cleaner taste.

Step 2

In a bowl, combine the chopped kimchi with 2 ladles of kimchi brine, 1 Tbsp minced garlic, 2 Tbsp gochugaru, and 1/2 Tbsp sugar. Mix well with your hands to ensure the seasoning is evenly distributed. The sugar helps to mellow the tanginess of the kimchi.

Step 3

Heat a pot over medium heat and add the seasoned kimchi. Stir-fry the kimchi until it becomes tender and slightly translucent, about 3-4 minutes. Stir-frying the kimchi beforehand deepens the flavor and adds a richer umami taste to the stew.

Step 4

Once the kimchi is softened, pour in about 3-4 cups of rice water. If you don’t have rice water, plain water works fine too. Rice water lends a subtle creaminess and a more robust flavor to the broth. Bring the stew to a boil over high heat.

Step 5

When the stew begins to boil vigorously, taste it and adjust the seasoning with soup soy sauce (guk-ganjang) if needed. Typically, 2 Tbsp is sufficient, but adjust based on the saltiness of your kimchi. Adding guk-ganjang enhances the savory notes.

Step 6

Once the broth is boiling, add the prepared enoki mushrooms, shredded onion, and diagonally sliced green onion. Let it simmer for another moment after adding the vegetables.

Step 7

Finally, add the blanched Spam slices and let the stew simmer for another brief moment until it’s ready. Avoid boiling for too long after adding the Spam, as it can become mushy. Just 1-2 minutes will suffice. Enjoy this delicious Spam Kimchi Stew with a warm bowl of rice!
