Main Ingredients- 150g Spam (about half of a small can)
- 210g cooked rice (approx. 1 standard pack)
- 35g onion (about 1/4 small onion)
- 20g green onion (approx. 5cm length)
- 1/2 Tbsp olive oil

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely mince the onion and green onion for a pleasant texture. Mincing them small prevents burning and allows the flavors to meld beautifully.

Cut the Spam into bite-sized cubes. 150g is approximately half of a standard small can, so keep that in mind. Cubing it generously makes for a satisfying bite.
Step 3
Heat a pan over medium-low heat and cook the cubed Spam without adding any oil until it’s golden brown and slightly crispy. Spam releases its own flavorful fat, so no extra oil is needed. Once cooked, transfer the Spam to a plate lined with paper towels to drain excess oil.

In the same pan, add 1/2 Tbsp of olive oil. Add the minced green onions and sauté until fragrant. Then, add the minced onion and cook until it becomes translucent. Sautéing the aromatics first enhances the overall flavor profile of the dish.

Once the onions and green onions are nicely sautéed, add the warm cooked rice (about 210g, or one standard pack). Break up any clumps and stir well. Then, add 1 Tbsp of oyster sauce and stir-fry quickly to ensure the sauce evenly coats every grain of rice.

Towards the end of the fried rice cooking, sprinkle in 1/2 tsp of black pepper and mix it through. Transfer the fried rice to a separate bowl. If you find the seasoning a bit bland, you can adjust with a pinch of salt, but the salty Spam often provides enough flavor when eaten together!

Now, let’s make the fluffy scrambled eggs. In a clean bowl, crack two eggs. Add 1/3 tsp of salt and 1/3 tsp of sugar and whisk gently. Avoid over-whisking; a light mix is key for a tender texture.

Pour in about 1/4 cup (60ml) of heavy cream into the egg mixture and stir lightly. Heat 1/2 Tbsp of olive oil in a lightly greased pan over medium-low heat. Pour in the egg mixture and cook, making scrambled eggs. When the eggs are about halfway set, reduce the heat to very low or turn off the heat and let the residual heat cook them through. Cooking until about 2/3 done will result in moist and tender scrambled eggs. (You can substitute a small amount of milk for cream, or omit it entirely if unavailable.)
Step 9
Plate the fried rice attractively. Gently place the cooked scrambled eggs on top of the rice. A light drizzle of 1 tsp of perilla oil over the rice can add an extra layer of nutty aroma. (Perilla oil is optional.)
Step 10
Finally, arrange the cooked Spam pieces beautifully over the rice and eggs. Drizzle mayonnaise in a zig-zag pattern.
