How to Make Delicious Spinach Miso Soup
A hearty and comforting Spinach Miso Soup, generously packed with fresh spinach and simmered in a rich broth made from rice water and anchovy-dashi. Perfect for a satisfying meal!
Ingredients
- 1 bunch fresh spinach
- 500ml rice water (approx. 2 cups)
- 1 anchovy-kelp dashi pack
- 2 Tbsp fermented soybean paste (Doenjang)
- 1/2 Tbsp red pepper paste (Gochujang)
- 1 Tbsp minced garlic
- 1/4 leek (green onion), chopped
- 1 Korean green chili pepper, chopped
- 1 red chili pepper, chopped
Cooking Instructions
Step 1
First, let’s prepare the spinach. Trim off the very bottom ends of the spinach bunch and remove any wilted or damaged leaves. Wash the spinach thoroughly under cold running water to remove any dirt, then drain well.

Next, we’ll chop the other vegetables. Slice the leek diagonally into about 0.5cm thick pieces. Remove the seeds from the green and red chili peppers and chop them into small rounds. Finely mince the garlic.

Now, let’s make the flavorful broth! Pour 500ml of rice water into a pot and bring it to a rolling boil. Once boiling, add the anchovy-kelp dashi pack and simmer gently for about 10 minutes to extract a deep and refreshing flavor. After 10 minutes, remove and discard the dashi pack.

It’s time to dissolve the key flavor base: miso and gochujang. Add 2 generous tablespoons of doenjang and 1/2 tablespoon of gochujang into the simmering broth. Use a spoon to stir well, ensuring the pastes dissolve completely without lumps.

Add all the prepared spinach to the miso broth. It’s a good idea to gently push the spinach down with the broth to ensure it’s submerged.

Using your spoon, gently press the spinach down into the broth and continue to simmer. This helps the spinach absorb the delicious soup flavors more evenly.

Once the soup comes to a boil again, add 1 tablespoon of minced garlic and simmer for a little longer. The garlic will infuse the soup with a wonderful aroma and depth of flavor.

This is the final cooking step! Add the chopped leek, green chili pepper, and red chili pepper to the soup. Let it simmer briefly. The slight spiciness from the chilies and the refreshing taste of the leek will elevate your miso soup to perfection.
