Main Ingredients- 4 pieces Aged Kimchi (Makimchi)
- 700ml Broth (anchovy, radish, kelp broth, or store-bought broth/water)
Seasoning & Others- 3 Tbsp Perilla Oil
- 1 Tbsp Minced Garlic
- 3 Tbsp Sugar
- A pinch of Sesame Seeds
- 3 Tbsp Perilla Oil
- 1 Tbsp Minced Garlic
- 3 Tbsp Sugar
- A pinch of Sesame Seeds
Cooking Instructions
Step 1
First, prepare the broth that will add depth and flavor to the dish. You can make your own by simmering ingredients like anchovies, radish, and kelp, or use store-bought broth or plain water. (Using broth will result in a richer flavor.)
Step 2
Rinse the 4 pieces of aged kimchi under running water until clean. This helps remove excess seasoning and impurities, ensuring a cleaner taste.
Step 3
Cut the rinsed aged kimchi into bite-sized, rough pieces. Cutting them slightly larger than finely chopped will provide a better texture. Place all the cut kimchi into a wide pot.
Step 4
Now it’s time to season the kimchi. Sprinkle 2 tablespoons of perilla oil, 3 tablespoons of sugar, and 1 tablespoon of minced garlic evenly over the kimchi. The nutty aroma of the perilla oil will mingle with the kimchi, enhancing its flavor.
Step 5
Pour in the 700ml of prepared broth (or water) into the pot and bring to a boil over high heat. You can leave the lid off while it boils.
Step 6
Once the kimchi mixture comes to a boil, reduce the heat to medium-low. Let it simmer, partially uncovered, for about 1 hour until well-cooked. It’s important to check the bottom of the pot periodically and stir to prevent it from sticking or burning as the liquid reduces.
Step 7
Continue to cook until the kimchi is tender and most of the liquid has evaporated, leaving a thick, rich sauce. This process allows the kimchi’s original flavor and the seasonings to meld together, creating a deep and savory taste.
Step 8
Finally, drizzle the remaining 1 tablespoon of perilla oil and sprinkle with sesame seeds, then gently mix to combine. The fragrant perilla oil and toasted sesame seeds will further elevate the dish’s overall flavor.
Step 9
This delicious aged kimchi stir-fry cooked in perilla oil is ready! It’s so good, you won’t need any other side dishes. Enjoy your meal!
