Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash and peel the carrot and onion, then slice them thinly into strips. For the beef, cut the stir-fry cut into thin, long pieces. This shape allows the sauce to penetrate better, resulting in a more flavorful dish.
Step 2
Now, let’s lightly marinate the beef to enhance its flavor. In a bowl, combine the sliced beef with 1 Tbsp of Mihyang (you can substitute with cooking wine or mirin), 1/2 Tbsp of salt, and a pinch of pepper. This step helps to remove any unwanted odors from the beef and makes it more tender. Heat your wok or large skillet over high heat, then add the marinated beef and stir-fry quickly. Cook until the beef is just browned on the outside; avoid overcooking at this stage.
Step 3
It’s time to add the bean sprouts for a delightful crunch! Push the browned beef to one side of the pan. Add a little cooking oil to the empty side, then add the rinsed and drained bean sprouts. Gently toss the bean sprouts with the beef, stir-frying them together. Be careful not to overcook the bean sprouts, as they can become mushy. Stir-fry just until they are slightly softened but still retain their crispness.
Step 4
Add the julienned carrots to one side of the pan and stir-fry them along with the other ingredients until they soften slightly and their color brightens. Once the carrots are partially cooked, add the sliced onions. Now, push all the ingredients to the side of the pan again. Pour the 2 Tbsp of soy sauce into the empty space and let it sizzle for a moment before mixing it in with the beef and vegetables. This allows the soy sauce to caramelize slightly, adding depth of flavor.
Step 5
Finally, let’s adjust the seasoning and finish with aromatic flavors. Once all the ingredients are well combined, taste the dish. Add more salt and pepper if needed to suit your preference. Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle generously with toasted sesame seeds. The rich aroma of sesame oil and the nutty flavor of sesame seeds will complete your delicious stir-fried beef and bean sprouts!
