  • 2-3 Tbsp soy sauce (adjust to taste)
  • 1 tsp dried anchovy powder (or a little Dasida or salt as a substitute)

Even if you are using pre-boiled bracken purchased from the store, it’s highly recommended to blanch it once more to effectively remove any gaminess. Place the bracken in boiling water and simmer for about 5-10 minutes until tender. This process helps eliminate the bracken’s unique slightly bitter taste and any gamey odors, resulting in a cleaner flavor.

Rinse the blanched bracken thoroughly under running cold water until clean. Squeeze out excess water and cut it into bite-sized pieces, approximately 3-5 cm in length. Cutting them to a suitable length will make them easier to handle while cooking and eating.

In a large bowl, place the prepared bracken. Add 2-3 tablespoons of soy sauce for initial seasoning. Mix in 1 teaspoon of dried anchovy powder to enhance the umami flavor. (If you don’t have anchovy powder, you can use a small amount of Dasida or salt.) Add 1 tablespoon of minced garlic, 2 tablespoons of chopped green onions, 2 tablespoons of sesame oil, and 1.5 tablespoons of plum extract. Gently mix everything with your hands, ensuring the seasoning coats the bracken evenly. Marinating the bracken like this allows the flavors to penetrate deeply, making it more delicious. Marinate for at least 1 hour, or ideally overnight in the refrigerator for the best flavor.

Transfer the well-marinated bracken to a pot or frying pan with a lid and stir-fry. Cook over medium-low heat. It’s important to stir frequently as you cook to ensure the bracken becomes tender and the seasoning is well absorbed. Taste the bracken during cooking and add more soy sauce if it’s too bland, or adjust with salt according to your preference. Finally, drizzle a little sesame oil and sprinkle with sesame seeds for an added nutty aroma and even more deliciousness.
