Main Ingredients- Dried Gondre 60g (when dry)
- 1 Tbsp Minced Garlic
- 1 Tbsp Chopped Scallions
Seasoning Ingredients- 2 Tbsp Perilla Oil
- 1 Tbsp Korean Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Tuna Extract (or Anchovy Sauce)
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds (for garnish)
- 2 Tbsp Perilla Oil
- 1 Tbsp Korean Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Tuna Extract (or Anchovy Sauce)
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds (for garnish)
Cooking Instructions
Step 1
First, rinse the dried gondre thoroughly under running water two to three times. Then, soak the dried gondre in lukewarm water for about 30 minutes until it becomes soft and pliable.
Step 2
Place the soaked gondre in a pot with plenty of water and bring it to a boil. Once boiling, simmer over high heat for 20 minutes, then reduce the heat to low and continue to simmer for another 20 minutes, for a total of 40 minutes. This cooking time will tenderize the tough stems of the gondre, making it pleasant to eat.

After turning off the heat, let the gondre sit in the pot for another 15-20 minutes. This allows it to become even more tender from the residual heat. Afterward, drain the gondre and rinse it thoroughly under cold water.

Squeeze out excess water from the boiled gondre and cut it into bite-sized pieces. If the strands are too long, they can be awkward to eat, so cutting them into about 3-4 cm lengths is recommended.
Step 5
In a bowl, combine the cut gondre with 2 tablespoons of perilla oil, 1 tablespoon of Korean soup soy sauce, and 1 tablespoon of minced garlic. Gently mix and massage the ingredients into the gondre with your hands to marinate it evenly. This pre-seasoning step helps the flavors to penetrate.
Step 6
Heat a pan over medium heat. Add the marinated gondre and stir-fry quickly for about 3-4 minutes. The key is to stir-fry it briskly until the aromatic fragrance of the gondre is released.
Step 7
Once the gondre is sufficiently stir-fried, add 1 tablespoon of chopped scallions and drizzle 1 tablespoon of sesame oil. Stir-fry once more for a moment. Taste and adjust seasoning if necessary; a tiny pinch of salt can be added if needed, or you can add a bit more Korean soup soy sauce or tuna extract for extra umami.
Step 8
Finally, sprinkle with toasted sesame seeds for a nutty finish. Your delicious stir-fried dried gondre is now ready! Serve it over a warm bowl of rice and enjoy!
