Ingredients

  • Dried pumpkin tendrils 30g
  • Water from soaking pumpkin 1 cup
  • Green onion 1 Tbsp
  • Sugar 1/3 Tbsp
  • Minced garlic 1/2 Tbsp
  • Perilla oil 1 Tbsp
  • Soy sauce 1 Tbsp
  • Perilla seed powder 1 Tbsp
  • Sesame oil a little
  • Sesame seeds a little

Cooking Instructions

Step 1

First, prepare 30g of dried pumpkin tendrils. Soak them in lukewarm water for about 3 hours, changing the water once in between. Soaking softens the tendrils, making them easier to cook.

You’ll notice the water used to soak the pumpkin tendrils turns a beautiful yellowish hue, which is their natural color. Now, cut the soaked pumpkin tendrils into bite-sized pieces. Even the tastiest ingredients can be difficult to eat if they’re too long!

Finely chop the green onion. While about 1 tablespoon is typically used for this dish, having it pre-chopped makes cooking much smoother. You can even use the extra for other recipes.

(Tip) I took this photo to compare the color of the soaking liquid with the broth from a previous dried eggplant stir-fry. The color that emerges from different dried vegetables can vary, so this can be a helpful reference.

Instead of mixing the seasoning in a separate bowl, add the pumpkin tendrils directly to the pan with the ingredients. This helps minimize any loss of seasoning. Start by adding 1 tablespoon of chopped green onion to the pan.

Add 1/3 Tbsp sugar, 1/2 Tbsp minced garlic, 1 Tbsp perilla oil, and 1 Tbsp soy sauce. Gently mix everything together with your hands to ensure the seasonings are evenly distributed.

Now, stir-fry the pumpkin tendrils over low heat. Pour in 1 cup of the reserved soaking water (the water used to soak the pumpkin tendrils). If you prefer a more soupy dish, feel free to add a little more water. You can adjust the final seasoning with salt later if needed.

At this stage, add 1 tablespoon of perilla seed powder – the key ingredient for that rich, nutty flavor. This will greatly enhance the taste and aroma of the dish.
