Main Ingredients- 2 Eggplants (approx. 265g after trimming)
- 1/2 Onion (approx. 75g)
- 1/4 stalk Green Onion (approx. 20g)
Cooking Instructions
Step 1
Thoroughly wash the 2 eggplants under running water, gently rubbing them with your hands. The skin is rich in nutrients, so be sure to wash it well.
Step 2
Trim off both ends of the washed eggplants.
Step 3
Cut the prepared eggplants in half lengthwise. If they are thick, you can cut them into quarters.
Step 4
Slice the halved eggplants diagonally into approximately 4-5mm thick pieces. Avoid slicing them too thinly, or they may become mushy during stir-frying. Aim for a moderate thickness.

Slice the onion into 3-4mm thick strips and finely chop the green onion. Prepare 0.4 Tbsp of minced garlic in advance.
Step 6
Add the sliced eggplant and onion to a wide frying pan.

Drizzle 3 Tbsp of olive oil over the vegetables.

Add 2 Tbsp of water. (Tip: While you can stir-fry with just 4 Tbsp of oil, adding a little water helps release the eggplant’s moisture, making it easier to stir-fry and preventing sticking. It also results in a moister dish.)

Add 6 pinches of salt (about 1/2 tsp) and place the pan over medium-low heat. (Tip: Adding salt first helps the eggplant release its moisture effectively, making it tender and slightly seasoned as it cooks.)

Stir the ingredients gently with a spatula or spoon until the eggplant softens and wilts. Continue to cook until the eggplant starts to turn translucent.

Add 0.5 Tbsp of red pepper flakes. (Tip: Omit or adjust the amount of red pepper flakes if serving to children. You can also increase the amount for a spicier dish.)

Add 1 Tbsp of oyster sauce and mix well with the other ingredients.

Stir-fry over medium-low heat, ensuring the eggplant is evenly coated with the red pepper flakes and oyster sauce, allowing the flavors to meld.

Taste the dish and if it feels a bit bland, add another 3 pinches of salt and stir-fry briefly to adjust the seasoning.

Add the chopped green onion and minced garlic. Stir-fry for a short time until fragrant, then turn off the heat immediately. (Tip: Minced garlic and green onions can become bitter if overcooked, so add them at the end and cook briefly.)

Finally, drizzle with 0.5 Tbsp of sesame oil for gloss and give it one last stir to finish with a fragrant aroma.
