How to Make Stir-Fried King Oyster Mushrooms | Mushroom Side Dish Recipe
As the weather warms up, I’ve been making smaller batches of side dishes more frequently. While looking for new side dish ideas, I decided to make a healthy and delicious mushroom stir-fry using king oyster mushrooms. The chewy texture and savory flavor of these mushrooms make for an exquisite side dish that everyone, young and old, can enjoy. With its simple preparation, you can easily make it even on busy days. Adding colorful bell peppers not only makes this king oyster mushroom stir-fry visually appealing but also boosts its nutritional value. Let’s make your dining table more vibrant with this delightful dish.
Main Ingredients- 3 King Oyster Mushrooms (approx. 202g after trimming)
- 45g Red Bell Pepper
- 45g Yellow Bell Pepper
Cooking Instructions
Step 1
First, trim the bottom ends of the king oyster mushrooms cleanly. Cut them into 2-3 segments depending on their length, then slice them into approximately 3mm thick rounds. Slicing them not too thick ensures they absorb flavor well and have a pleasant texture.
Step 2
Julienne the red and yellow bell peppers into strips about 3-4mm thick. Prepare 0.5 tablespoon of minced garlic.
Step 3
Take a wok or a deep frying pan and add all the prepared king oyster mushrooms. Drizzle 3 tablespoons of olive oil into the pan, coating the mushrooms.
Step 4
Next, add 1.5 tablespoons of water. (Tip: Mushrooms tend to absorb oil initially, then release moisture as they cook. Adding a small amount of water at this stage helps prevent the stir-fry from becoming too oily and keeps it moist.)
Step 5
Sprinkle about 3 pinches of salt over the mushrooms. Stir-fry over medium heat on the stovetop, gently tossing with a spatula until the mushrooms soften slightly.
Step 6
Once the mushrooms are somewhat cooked, add 0.5 tablespoon of soy sauce to enhance the flavor.
Step 7
Add 0.5 tablespoon of oligosaccharide for a touch of sweetness. Adjust the sweetness to your preference.

Add 0.2 teaspoon of salt to season. The basic seasoning is now complete.
Step 9
Stir-fry the ingredients, shaking the pan or gently mixing with a spatula, to ensure all the seasonings are evenly distributed throughout the mushrooms. Be mindful of the heat to prevent burning the seasoning.
Step 10
Now, add the julienned red and yellow bell peppers, along with the minced garlic. Finally, add another 2-3 pinches of salt to adjust the taste.
Step 11
Stir-fry just until the bell peppers are slightly crisp, then turn off the heat. (Tip: Taste the stir-fry and if it feels bland, add more salt to adjust to your liking.)
Step 12
With the heat off, sprinkle a pinch of black pepper for added aroma and give it one final gentle mix.
Step 13
Finally, sprinkle a generous amount of toasted sesame seeds to finish. Your delicious stir-fried king oyster mushrooms are ready! This dish is excellent served with freshly cooked rice or as a lunchbox side.
