Today, I’m sharing a delicious and budget-friendly stir-fry recipe using king oyster mushrooms! We’ll add vibrant bell peppers, sweet onions, and aromatic scallions for a nutritious and visually appealing dish. A touch of oyster sauce will enhance the savory umami, making this a perfect side dish for any meal or even a tasty appetizer.   • 1 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Cooking Oil

Cooking Instructions

First, slice the scallion at a 0.3cm interval, cutting diagonally. This slicing method will give a pleasant texture when stir-fried.

Next, thinly slice the onion into 0.3cm thick strips. Slicing them too thickly can prolong the cooking time.

Similarly, julienne the yellow and red bell peppers to a 0.3cm thickness, matching the onion. Their vibrant colors will make the dish look more appetizing.

Trim the very bottom end of the king oyster mushrooms. Then, slice them into bite-sized pieces about 0.5cm thick and 3-4cm long. Slicing them too thinly might reduce their satisfying chewiness.

Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced scallions and stir-fry until they release a gentle aroma and begin to turn light brown. Then, add the sliced onion, yellow bell pepper, and red bell pepper, and continue to stir-fry together.

Once the vegetables start to turn translucent and slightly tender, add the sliced king oyster mushrooms. Stir-fry, ensuring everything is mixed well. King oyster mushrooms release a lot of moisture, so it’s best to cook them over medium heat to prevent excessive wateriness.
