How to Make King Oyster Mushrooms Stir-Fried with Perilla Seeds: Delicious with Perilla Powder
A delicious recipe for stir-fried king oyster mushrooms with perilla seeds.
Ingredients- 1 pack King Oyster Mushrooms
- 1/2 Onion
- 1 Cheongyang Pepper
Seasoning- 2 Tbsp Perilla Oil
- Pinch of Salt
- 1 Tbsp Perilla Seed Powder
- 1/2 Tbsp Minced Garlic
- 2 Tbsp Perilla Oil
- Pinch of Salt
- 1 Tbsp Perilla Seed Powder
- 1/2 Tbsp Minced Garlic
Cooking Instructions
Step 1
Prepare 1 pack of king oyster mushrooms. These mushrooms have a firm texture and absorb flavors beautifully.
Step 2
Trim the very bottom end of the king oyster mushrooms with a knife. Don’t remove too much; just clean up the tough part.
Step 3
Gently tear the mushrooms into bite-sized pieces with your hands. Tearing them along their natural lines helps them absorb seasoning better and creates a more tender texture.
Step 4
Lightly rinse the torn mushrooms and pat them dry. Over-washing can reduce their flavor. Using a kitchen towel to gently press out excess water is a good idea.
Step 5
For a touch of heat, thinly slice 1 Cheongyang pepper diagonally. The spicy kick helps cut through the richness of the perilla seeds, making the dish more balanced and delicious. (Feel free to omit if you prefer less spice.)
Step 6
Thinly slice half an onion. Onions add a subtle sweetness and depth of flavor. If using frozen onions, thaw them first or cook them a bit longer. (This ingredient is optional.)
Step 7
Prepare your seasoning ingredients: 2 tablespoons of perilla oil, a pinch of salt, 1 tablespoon of perilla seed powder, and 1/2 tablespoon of minced garlic. You can mix these in a small bowl or add them directly to the pan as you cook.
Step 8
Heat the perilla oil in a pan over medium heat. Add the sliced onions and minced garlic. Sauté until the onions become translucent and fragrant, about 2-3 minutes. This step is key for developing flavor.
Step 9
Add the prepared king oyster mushrooms to the pan. Stir-fry them with the onions and garlic until they begin to soften and release some moisture. You can also add all ingredients at once, but sautéing the aromatics first enhances the overall taste.
Step 10
Toss in the sliced Cheongyang pepper and continue to stir-fry until the mushrooms are tender and well-cooked, about 5-7 minutes. Keep the heat at medium-high to prevent excess water from accumulating.
Step 11
Season the stir-fry with salt to your preference. Add salt gradually and taste as you go to ensure perfect seasoning.
Step 12
It’s common for fresh mushrooms to release a good amount of moisture during cooking. Don’t be alarmed! This moisture, combined with the perilla seed powder, creates a wonderfully thick sauce, similar to how a roux thickens a sauce.
Step 13
Stir in 1 tablespoon of perilla seed powder. This powder will thicken the sauce and add a rich, nutty flavor. Adjust the amount of perilla seed powder to achieve your desired consistency. Add more if needed.
Step 14
Here’s how the stir-fry looks after adding the perilla seed powder. You might still see some liquid, but it will thicken as it cooks.
Step 15
Increase the heat to high and stir-fry for about 2 more minutes. The ideal consistency is slightly saucy, as shown in the picture. Perilla seeds tend to clump together as they cool, so leaving a little moisture ensures the dish remains palatable and flavorful.
Step 16
Transfer the delicious stir-fried mushrooms to a serving dish.
Step 17
The aroma of perilla oil and perilla seeds is simply divine! This simple dish offers a wonderful combination of nutty and savory flavors, making it a healthy and satisfying side dish that complements any meal.
