  • 500g oyster mushrooms

Seasoning & Aromatics
  • 20g green onion (white part)
  • 1 red chili pepper
  • 1 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • A pinch of roasted sesame seeds
  • A pinch of salt (for seasoning)

Cooking Instructions

Step 1

Prepare 500g of fresh oyster mushrooms. Trim off the tough, woody ends of the mushrooms. You can either use a knife for a clean cut or gently pull them apart with your hands. If the mushrooms are large, tear them into bite-sized pieces by hand; this helps them absorb the seasoning better, making them tastier.

Step 2

Finely chop the white part of 20g of green onion. Seed and finely mince 1 red chili pepper. If you prefer a spicier kick, you can use a Korean green chili pepper (Cheongyang chili).

Step 3

Place the prepared oyster mushrooms in a thick-bottomed frying pan or pot. Stir-fry them over high heat for a short time, about 30 seconds to 1 minute. This process helps to quickly evaporate excess moisture from the mushrooms and slightly wilt them.

Step 4

Transfer the stir-fried mushrooms to a wide tray or plate and let them cool for a few minutes. You want them to cool down just enough so you can handle them, preventing the seasonings from cooking prematurely.

Step 5

In a bowl, combine the slightly cooled mushrooms with the chopped green onion, minced red chili pepper, 1 tablespoon of sesame oil, a pinch of roasted sesame seeds, and 1 tablespoon of minced garlic. Gently mix everything together. Season with a pinch of salt to taste. Mix well until all ingredients are evenly distributed for a fragrant and delicious oyster mushroom salad.
