As the season of spring arrives, so does the fragrant petasites, a vegetable I adore. The moment I saw it, I had to buy some! Typically, fresh petasites are sold, but this time, I was delighted to find pre-boiled ones. Usually, the large bunches of fresh petasites can be overwhelming to cook and consume, making me hesitate. However, since these were already boiled, I could immediately start cooking without feeling burdened. I decided to stir-fry them with mini king oyster mushrooms, adding a generous amount of nutty perilla powder. The result was a dish that looked incredibly elegant and tasted divine! Even my daughter, who usually isn’t fond of greens, absolutely loved it and enjoyed it immensely. The chewy texture of the mushrooms, the rich nuttiness from the perilla powder, and the subtle fragrance of the petasites create a harmonious blend that is truly delicious. Ingredients
  • 500g boiled petasites
  • 9 mini king oyster mushrooms

Seasoning
  • 2 Tbsp olive oil
  • 1 Tbsp tuna extract (or fish sauce)
  • 1 tsp minced garlic
  • Salt (to taste)
  • 3 Tbsp perilla powder
  • Chopped scallions (for garnish, optional)
  • 1 cup water (200ml)

Cooking Instructions

Step 1

First, rinse the boiled petasites under running water. Then, cut them into bite-sized pieces, about 3-4 cm in length. Cutting them to a manageable size will make stir-frying and eating more convenient.

Step 2

Trim the ends of the mini king oyster mushrooms and slice them thickly, similar in length to the petasites. Slicing the mushrooms thickly will enhance their chewy texture.

Step 3

Heat a wok or a wide pan over medium heat. Add olive oil, then add the sliced petasites and mushrooms. Stir-fry for about 2-3 minutes until the mushrooms begin to soften. Pour in 1 cup of water (200ml), cover with a lid, and let it cook for 3-4 minutes until the petasites are tender and the ingredients are nicely braised.

Step 4

Remove the lid. Add 1 tablespoon of tuna extract and 1 teaspoon of minced garlic. Season with salt to your preference. Finally, add 3 tablespoons of perilla powder generously and mix everything well. Stir continuously to prevent the perilla powder from clumping and to fully release its nutty aroma. You can add some chopped scallions at the end for extra flavor.

Step 5

Once all the ingredients are well combined and the sauce has slightly thickened, turn off the heat. Transfer the delicious stir-fried petasites and mushrooms to a serving plate. Enjoy this flavorful dish while it’s warm for the best aromatic and nutty experience.
