While grocery shopping, I stumbled upon fresh autumn sea purslane sold for a mere 1,000 KRW! I was surprised by the generous portion for the price and immediately decided to bring it home. Today, I’ll show you how to make a delicious and simple salad with this wonderful sea purslane. It’s the perfect treat when you’re not feeling very hungry!

Ingredients

  • Sea purslane, 1,000 KRW worth (approx. 200g)
  • Salt, 1/2 tsp
  • Sesame oil, 1 Tbsp
  • Minced garlic, 1 tsp
  • Toasted sesame seeds, a pinch

Cooking Instructions

Step 1

Sea purslane is usually very clean, with minimal dirt or debris, so it rarely needs extensive washing. However, just to be safe, give it a quick rinse under running water. Bring a pot of water to a boil with a tiny pinch of salt. Add the sea purslane and blanch for no more than 30 seconds. Be careful not to overcook, as it can become mushy. Immediately after blanching, plunge it into cold water to stop the cooking process and preserve its crisp texture.

Once rinsed in cold water, drain the sea purslane well in a colander. Gently squeeze out excess water with your hands. The key is to remove most of the water without crushing the delicate strands, ensuring it retains its delightful crunch.

Place the lightly squeezed sea purslane in a mixing bowl. Add the prepared seasonings: 1/2 tsp salt, 1 tsp minced garlic, 1 Tbsp sesame oil, and a pinch of toasted sesame seeds. Remember that sea purslane has a naturally slightly salty taste, so start with less salt and adjust if needed. Gently toss the ingredients together, as if flicking them lightly, to evenly coat the sea purslane without breaking it. Transfer the finished salad to a serving dish for a delightful autumn vegetable side dish!
