  • 1/2 block firm tofu (approx. 150-200g)
  • 1 egg
  • 1 shiitake mushroom (or 2 if small)
  • 1/4 onion
  • A small amount of green onion, finely chopped
  • 1 tsp cornstarch
  • 75ml water (for cornstarch slurry)

Sauce Ingredients
  • 1 Tbsp soy sauce
  • 1 tsp gochujang (Korean chili paste; add more for extra spice)
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine (mirin or cheongju)
  • 1 tsp dark soy sauce (for color, optional)
  • 0.5 Tbsp corn syrup (or rice syrup)
  • 75ml water
  • A pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the ingredients. Thinly slice the onion and shiitake mushrooms. Finely chop the green onions. Cut the tofu into bite-sized cubes, about 1.5-2 cm thick. This size is easy to eat.

Step 2

Now, it’s time to make the sauce that will bring this dish to life! In a bowl, combine 1 Tbsp soy sauce, 1 tsp gochujang, 1 Tbsp oyster sauce, 1 Tbsp cooking wine, 0.5 Tbsp corn syrup, and a pinch of black pepper.

Add 75ml of water to the bowl and stir well until all ingredients are fully incorporated. This sauce will have a wonderful balance of savory soy sauce and a hint of spicy flavor from the gochujang.

Heat a generous amount of oil in a pan over medium-low heat. Add the cubed tofu and pan-fry it until golden brown and slightly crispy on all sides. This step ensures the tofu holds its shape and adds a delicious nutty flavor.

While the tofu is frying, or using a separate clean pan, whisk 1 egg and scramble it until fluffy. You can set this aside once cooked. This adds a lovely texture and richness.

Now let’s stir-fry! Lightly oil a pan over medium heat and add the chopped green onions. Sauté them until fragrant. Then, add the 40g of ground pork. Break up any clumps and stir-fry until the pork is no longer pink.

Once the pork is cooked through, add the sliced onion. Stir-fry briefly until the onions are slightly softened and translucent. This will release their natural sweetness.

Add the sliced shiitake mushrooms and the pan-fried tofu to the pan. Gently toss them together with the pork and onions, allowing the flavors to meld.

Pour all of the prepared sauce over the ingredients in the pan. Stir gently and bring to a simmer over medium-low heat. Let it bubble and cook for about 3-4 minutes, allowing the tofu to absorb the delicious sauce.

When the sauce has reduced by about half, gently fold in the scrambled eggs. Mix carefully so as not to break them up too much. The eggs add a wonderful creamy element to the dish.

It’s time to thicken the sauce. In a small bowl, whisk together 75ml of water and 1 tsp of cornstarch until smooth. Pour this slurry into the pan. For an extra rich color and authentic Chinese flavor, add 1 tsp of dark soy sauce (optional, but recommended if available).

Stir continuously as you pour in the cornstarch slurry. The sauce will quickly thicken, coating all the ingredients beautifully. Cook for another minute until the desired consistency is reached, then turn off the heat immediately to prevent over-thickening.
