When stir-fried with chewy King Oyster mushrooms, the natural umami from the mushrooms makes this simple zucchini side dish significantly more delicious and flavorful. Main Ingredients- 2 Zucchini

- 1 Tbsp Minced Garlic
- 2 Tbsp Fish Sauce
- 1 tsp Salt

Cooking Instructions
Step 1
First, prepare the zucchini, King Oyster mushrooms, carrot, and onion. Ensuring your vegetables are fresh is key to a delicious outcome.

Prepare the King Oyster mushrooms for cooking. Trim the ends and then slice them lengthwise into flat pieces, about 0.5cm thick. This slicing method enhances the chewy texture.
Step 3
Wash the zucchini thoroughly, gently rubbing with coarse salt, and remove the ends. Slice them into half-moon shapes or bite-sized pieces, approximately 0.5cm thick.

Peel the carrot and julienne it into matchsticks, about 0.5cm thick, similar to the zucchini slices. The carrot adds a lovely color and natural sweetness.

Peel the onion and julienne it into fine matchsticks, about 0.5cm thick, just like the carrot. The sweetness of the onion will deepen the overall flavor profile of the dish.

In a wide pot or pan, bring 200ml of water to a boil. Add the coin stock cube and stir until dissolved. Using a coin stock cube provides a rich umami flavor without needing separate broth.
