Savory Stir-Fried Zucchini with Shrimp

A simple and nutritious side dish made with common pantry ingredients, perfect for a quick meal. This stir-fried zucchini and shrimp is bursting with flavor!
Main Ingredients
- 200g shrimp, peeled and deveined
- 1/2 medium zucchini
Seasoning & Others
- 0.5 Tbsp salted fermented shrimp (saeujeot)
- 0.5 Tbsp minced garlic
- A pinch of toasted sesame seeds
- A little canola oil
- 1 Tbsp sesame oil (optional)

Cooking Instructions
Step 1
First, prepare the shrimp. If using frozen shrimp, thaw them by soaking in cold water. Rinse them lightly under running water.
Step 2
To remove any potential fishiness and ensure a tender, springy texture, blanch the shrimp in boiling water for just about 30 seconds to 1 minute. Be careful not to overcook, as this can make the shrimp tough.
Step 3
Drain the blanched shrimp thoroughly using a colander. Excess water can dilute the flavor when stir-frying.
Step 4
Wash the zucchini, then slice it in half lengthwise. Cut into bite-sized pieces about 0.5 cm thick. Slicing too thinly might cause them to break apart during cooking.
Step 5
Heat a skillet over medium heat with a generous drizzle of canola oil. Add the sliced zucchini and stir-fry until it starts to turn translucent.
Step 6
Once the zucchini is slightly softened, add the salted fermented shrimp (saeujeot) to season. Saeujeot adds umami and saltiness; adjust to your taste. Stir well to combine and continue cooking.
Step 7
Add the minced garlic and stir-fry until fragrant. Keep an eye on the heat to prevent the garlic from burning.
Step 8
Now, add the drained shrimp to the pan and stir-fry until everything is well combined. Finally, sprinkle with toasted sesame seeds for a nutty aroma. For an extra layer of flavor, you can add 1 Tbsp of sesame oil at this stage (optional).
Step 9
Transfer the finished stir-fried zucchini and shrimp to a serving dish. It’s delicious served immediately while warm, or can be enjoyed as a side dish after cooling.
