Utilize that frozen beef belly in your freezer and stir-fry it with crisp Chinese cabbage or sweet regular cabbage. The savory beef belly fat will render and coat the vegetables, creating a delightful meal or a perfect accompaniment to drinks. Without complicated seasoning, you can achieve a deep, umami flavor with the perfect balance of oyster sauce and soy sauce.
Ingredients- 200g beef belly slices
- 1 handful of Chinese cabbage (or 5-6 leaves of Napa cabbage)
- 1 Tbsp soy sauce
- 0.5 Tbsp oyster sauce
- Pinch of black pepper
- Pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare your chosen cabbage. If using regular cabbage, cut it into bite-sized cubes, about 1cm. If you’re using Napa cabbage, wash 5-6 leaves thoroughly and slice them lengthwise into roughly 5cm strips.
Step 2
Heat a pan over medium heat and add the beef belly slices. Stir-fry them until they start to render their fat. Beef belly releases quite a bit of oil, so use a paper towel to carefully blot out about 2/3 of the rendered fat, leaving about 1/3 behind. This remaining fat is key for flavor. Add your prepared cabbage to the pan and stir-fry with the beef belly until the cabbage wilts and becomes tender.
Step 3
Once the cabbage has softened and turned translucent, add 0.5 Tbsp of oyster sauce to enhance the savory notes.

Next, add 1 Tbsp of soy sauce for an extra layer of umami and stir to combine evenly with all the ingredients.

Finally, sprinkle in a pinch of black pepper to cut through richness and stir-fry over medium heat for another 2-3 minutes, ensuring the sauce evenly coats everything.
