  • 3.5 Tbsp soy sauce
  • 2 Tbsp sugar
  • 2 Tbsp mirin (or cooking wine)
  • A pinch of black pepper
  • A pinch of salt (adjust to taste)
  • 100ml water

First, rinse the chicken drumettes thoroughly under running water. Then, to remove any unpleasant odors, place the drumettes in a bowl with 200ml of milk and let them soak for about 30 minutes. After soaking, discard the milk and lightly rinse the drumettes under cold water. Pat them dry. This soaking process is effective in eliminating any gamey smell.

In a separate bowl, combine 3.5 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp mirin, a pinch of black pepper, a pinch of salt, and 100ml of water. Stir well until the sugar is completely dissolved. Feel free to adjust the amounts of sugar or soy sauce to create your own perfect balance of sweet and salty.
