  • 200ml water
  • 5 Tbsp soy sauce
  • 2 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp sugar
  • Sesame seeds, for garnish

First, rinse the raw peanuts lightly in cold water to remove any dust or impurities.

Place the rinsed peanuts in a pot and add enough water to cover them completely. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 15-20 minutes.

Discard all the water from the first boiling. Rinse the pot, then add fresh water and the peanuts again. Boil them a second time. This double boiling process effectively removes any astringent taste from the peanut skins, resulting in a much softer and more pleasant flavor.

Pour out the water from the second boiling. Now it’s time to prepare the braising liquid. Add 5 tablespoons of soy sauce and 200ml of fresh water to the pot with the boiled peanuts. Bring to a simmer over medium heat and begin to braise.

As the peanuts absorb the soy sauce and gradually turn a nice brown color, add 2 tablespoons of corn syrup and 1 tablespoon of sugar. Reduce the heat slightly and continue to stir frequently to prevent sticking, allowing the peanuts to become glossy. Cook until most of the liquid has evaporated and the sauce has thickened.

Once the peanuts are well-coated with the glaze and look shiny, they are almost ready. Just before turning off the heat, sprinkle generously with sesame seeds for an added nutty aroma and mix gently.
