Main Ingredients

  • 1 cup minced beef (approx. 100g)
  • 1/2 onion (small)
  • 4 tortillas (flour)
  • 2 cups shredded mozzarella cheese (approx. 200g)

Bulgogi Seasoning

  • 2 Tbsp soy sauce
  • 1 Tbsp corn syrup (or honey)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the bulgogi seasoning. In a bowl, combine 1 cup of minced beef, 2 Tbsp soy sauce, 1 Tbsp corn syrup, and a pinch of black pepper. Mix well to marinate the beef. Let it sit for a few minutes for the flavors to meld.

Step 1

Step 2

Finely dice half an onion. This will be stir-fried with the beef to add extra flavor and texture.

Step 2

Step 3

Heat a pan over medium-high heat. Add the marinated minced beef and diced onion. Stir-fry, breaking up the beef with chopsticks or a spatula, until it’s no longer clumped together.

Step 3

Step 4

It’s crucial to cook the bulgogi until it’s relatively dry and crumbly, with most of the liquid evaporated. If there’s too much moisture, your quesadilla might turn out soggy once assembled and cooked. So, keep stir-frying until the bulgogi is nicely browned and dry.

Step 4

Step 5

Now, let’s assemble the quesadillas! Place a clean pan over low heat. Lay one tortilla flat in the pan. Evenly sprinkle about 1/2 cup of shredded mozzarella cheese over the entire tortilla, reaching close to the edges. Feel free to adjust the amount of cheese to your liking – more cheese makes it even better!

Step 5

Step 6

On one half of the cheesy tortilla, evenly spread the cooked bulgogi. Be careful not to overfill, as it might spill out when you fold it.

Step 6

Step 7

To ensure the tortilla doesn’t burn before the cheese melts, keep the heat on low. Gently cook until the cheese is beautifully melted and gooey. Covering the pan can help the cheese melt more evenly and quickly. Avoid high heat, which will scorch the tortilla!

Step 7

Step 8

Carefully lift the tortilla half covered only with cheese and fold it over the bulgogi-covered half, creating a semi-circular shape.

Step 8

Step 9

Once golden brown and the cheese is melted, carefully remove the quesadilla from the pan. Cut it into three bite-sized portions using a knife or pizza cutter. Enjoy immediately while it’s warm, crispy, and cheesy!
