Main Ingredients
  • 350g chicken drumettes (about 8-10 pieces)
  • 1/2 onion, sliced
  • 1 stalk green onion, diagonally sliced

Soy Glaze Sauce
  • 4 Tbsp soy sauce
  • 2 Tbsp sugar
  • 1 Tbsp cooking wine (like mirin)
  • 1 Tbsp minced garlic
  • 50ml water
  • 1/3 tsp black pepper (adjust to taste)

Cooking Instructions

Step 1

First, peel and thoroughly wash the onion. Cut it in half and then slice it into about 0.5cm thick strips. Slicing it this way helps the sauce to penetrate well and improves the texture.

Step 2

Wash the green onion clean. Slice it diagonally into pieces about 5cm long. Diagonal cuts make for a nicer presentation and allow the sauce to absorb better.

Step 3

Rinse the chicken drumettes under cold running water and then pat them completely dry with paper towels. Removing excess moisture is important to prevent oil splattering during cooking and helps the sauce adhere better. Arrange the dried drumettes attractively in a skillet or pot.

Step 4

Scatter the sliced onion and diagonally cut green onion evenly over the chicken drumettes in the pan. The moisture released from the vegetables will help keep the chicken tender and add depth of flavor.

Step 5

Now, let’s prepare the delicious glaze. Pour the soy sauce, sugar, cooking wine, minced garlic, water, and black pepper evenly over the chicken drumettes and vegetables. Ensure the sauce is distributed uniformly across the pan.

Step 6

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer for 10 to 15 minutes, or until the sauce has reduced and thickened. Flip the drumettes occasionally to ensure they are coated evenly with the glaze. You’ll notice the sauce becoming glossy and coating the chicken beautifully.

Step 7

The dish is ready when the sauce has reduced and coats the chicken drumettes with a beautiful sheen. They are delicious served hot right away, or you can let them cool slightly for the flavors to deepen further. This dish is also excellent served over rice as a simple rice bowl.
