Ingredients

  • 2 bowls of cooked rice (chilled rice works best, but warm is fine too)
  • 8 strips of bacon
  • 2/3 cup kimchi (chopped)
  • 1/2 onion (medium size)
  • 1/2 Tbsp oligosaccharide (or sugar, adjust to kimchi’s sourness)
  • 1 Tbsp cooking oil (or brown rice oil)
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • Pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, peel and wash half an onion. Finely dice it into small pieces, making it easy for children to eat. Dicing it finely helps to release the onion’s sweetness when sautéed.

Step 1

Step 2

Heat 1 Tbsp of cooking oil (or brown rice oil) in a frying pan over medium heat. Add the diced onion and sauté until it becomes translucent and fragrant. This process brings out the onion’s natural sweetness.

Step 2

Step 3

Once the onion starts to turn translucent, add 2/3 cup of chopped kimchi to the pan. This will balance the sourness of the kimchi and add a delicious umami flavor. (Adding a little kimchi juice can enhance the taste further!)

Step 3

Step 4

After adding the kimchi, drizzle in 1/2 Tbsp of oligosaccharide (or sugar) to balance the kimchi’s tanginess. Stir everything together and cook over medium heat, stirring constantly. Sauté until the onions are lightly browned and the kimchi’s moisture has evaporated, concentrating the flavors.

Step 4

Step 5

Once the kimchi and onions are well sautéed, push them to one side of the pan. Lay the 8 strips of bacon flat in the empty space. Reduce the heat to medium-low and cook the bacon slowly until it’s golden brown and cooked through, ensuring it doesn’t burn.

Step 5

Step 6

When the bacon is crispy and golden on both sides, use tongs and scissors to cut it into bite-sized pieces (about 1-2 cm). The savory fat from the bacon will add incredible depth to the fried rice.

Step 6

Step 7

Mix the cut bacon pieces with the sautéed kimchi and onion mixture. The rendered bacon fat will meld beautifully with the kimchi, creating an even richer and more delicious flavor profile.

Step 7

Step 8

Now, add the 2 bowls of cooked rice to the pan. Use a spatula to gently break up any clumps of rice and mix it evenly with the other ingredients. Stir-fry thoroughly, ensuring each grain of rice is coated with the flavorful mixture, until the rice is slightly toasted and separate.

Step 8

Step 9

Push the fried rice to one side of the pan again. Pour 1 Tbsp of soy sauce into the empty space. Increase the heat slightly and let the soy sauce sizzle and bubble (for about 7 seconds). Then, quickly mix the bubbling soy sauce into the entire fried rice. This caramelizes the soy sauce, adding a wonderful depth of flavor and umami.

Step 9

Step 10

Transfer the delicious Bacon Kimchi Fried Rice to a serving bowl. Drizzle with 1 Tbsp of sesame oil and sprinkle with toasted sesame seeds for a final touch. This not only makes it look appealing but also enhances the aroma and taste. Enjoy your amazing homemade fried rice!
