We’ll then transform this delicious Yukhoe into a vibrant ‘Yukhoe Bibimbap’ (Korean beef tartare mixed rice bowl). This recipe offers two distinct marinades: a soy sauce-based dressing perfect for highlighting the pure flavor of the Yukhoe, and a gochujang (Korean chili paste)-based sauce ideal for mixing with rice and vegetables in the Bibimbap.   • 1/2 pear, thinly sliced
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1 fresh egg yolk
  • A sprinkle of toasted sesame seeds

Yukhoe Bibimbap Ingredients

  • 200g marinated Yukhoe
  • 100g mixed salad greens
  • 1.5 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • A sprinkle of toasted sesame seeds
  • Cooked rice, appropriate amount

First, prepare the pear. Peel it, remove the core, and slice it into thin julienne strips. You can adjust the thickness to your preference – I like mine slightly thicker to enjoy its crispness and sweetness.

For the Yukhoe marinade, I’ve opted for ‘Katsuobushi broth soy sauce’ (Gasoogukmul Tteu-yu) instead of plain salt or regular soy sauce. This type of soy sauce is less salty and has a hint of sweetness, making it perfect for enhancing the beef’s natural flavor without overpowering it. Regular soy sauce can also be used, but the Katsuobushi broth soy sauce adds a unique umami depth.

Here we have the star ingredient: ‘Kkuri-sal.’ This cut was highlighted on the TV show ‘I Live Alone’ as a top-tier cut for Yukhoe. I’m using two packs, totaling 400g of fresh Korean beef Kkuri-sal. Kkuri-sal is known for its excellent balance of lean meat and marbling, resulting in a supremely tender and savory taste.

In a bowl, combine the Kkuri-sal with the Katsuobushi broth soy sauce, sugar, and sesame oil. Gently mix and massage the ingredients into the beef. The more you knead and massage, the chewier and more satisfyingly textured the Yukhoe will become. Ensure the seasoning is evenly distributed.

Now, let’s plate the Yukhoe beautifully. Arrange the marinated beef neatly on a serving dish, leaving a small well in the center for the egg yolk. Carefully place the fresh egg yolk in the center – it adds a wonderful richness and silkiness to the Yukhoe. It’s simply not complete without a luscious egg yolk!

Finish by drizzling a little sesame oil over the top and sprinkling with toasted sesame seeds. Your delicious Korean Beef Kkuri-sal Yukhoe is ready! It truly is incredibly savory with the best texture and taste. The texture is wonderfully tender yet delightfully chewy. Having only tried Yukhoe from cuts like Hongdubae-sal and Udun-sal before, Kkuri-sal is a revelation – its subtle richness is captivating. ^^

After preparing the Yukhoe, it’s time to make the Yukhoe Bibimbap. Start by placing a generous portion of fresh salad greens in a large bowl. Using a mix of greens will add variety in texture and flavor.

Using the remaining 200g of Kuri-sal Yukhoe, we’ll create the bibimbap topping. Combine the beef with gochujang, plum extract, and sesame oil. Mix and knead thoroughly until the seasoning is well incorporated. Spoon this flavorful Yukhoe mixture over the rice and serve alongside the salad greens.
