Savory Zucchini Stir-fry with Perilla Seeds

I decided to get creative and use up some leftover perilla seed powder. This stir-fry is incredibly flavorful!

Main Ingredients

  • 1 medium zucchini
  • 1/2 medium onion

Seasoning Ingredients

  • 1 Tbsp cooking oil
  • 1 tsp minced garlic
  • 0.5 Tbsp salted shrimp (fermented shrimp paste)
  • 2 Tbsp perilla seed powder
  • 100 ml kelp broth (or anchovy broth)

Cooking Instructions

Step 1

First, heat 1 tablespoon of cooking oil in a pan over medium heat. Add the thinly sliced onion (half a medium onion) and stir-fry until it becomes translucent, allowing its natural sweetness to develop. This step enhances the overall flavor.

Once the onion starts to turn translucent, add the zucchini, sliced into half-moons, to the pan. Continue to stir-fry them together with the onion for about 2-3 minutes, or until the zucchini begins to soften slightly. Be careful not to overcook, as you want the zucchini to retain a bit of its texture.

When the zucchini and onion are partially cooked, add 1 teaspoon of minced garlic and 0.5 tablespoon of salted shrimp. Stir well to combine and continue sautéing for another minute. The salted shrimp adds a wonderful savory depth. Taste and adjust seasoning with a pinch of salt if needed.

Finally, pour in the 100 ml of kelp broth and bring it to a simmer over medium heat. Once simmering, reduce the heat to low. As the liquid starts to thicken slightly, stir in the 2 tablespoons of perilla seed powder. Whisk vigorously to ensure the powder dissolves smoothly without clumps. Cook for another minute until the sauce thickens to your desired consistency. Turn off the heat and serve. A small drizzle of sesame oil at the end is optional but recommended for extra aroma.
