Main Ingredients- 1 slice of bread (using a thick slice will yield even better results)
- 1 egg (use a fresh egg)
- A small amount of scallions (use both the white and green parts)
- 1 Tbsp sesame oil
- Pinch of salt
- Pinch of black pepper
- Pinch of red pepper flakes (optional, add if you like a hint of spice)
Soy-Mayonnaise Sauce- 50g mayonnaise (approx. 3.5 Tbsp)
- 5g soy sauce (approx. 1 tsp)
- 50g mayonnaise (approx. 3.5 Tbsp)
- 5g soy sauce (approx. 1 tsp)
Cooking Instructions
Step 1
Prepare all your ingredients. Gather the bread, a fresh egg, and the thoroughly washed scallions.
Step 2
Wash the scallions and pat them dry. Slice them diagonally into approximately 0.5 cm thick pieces. This slicing method ensures they become tender yet retain a pleasant texture when cooked.
Step 3
Make the soy-mayonnaise sauce that will serve as the base for your toast. Combine 50g of mayonnaise with 5g of soy sauce and mix well until smooth. The salty notes of the soy sauce and the creamy richness of the mayonnaise create a harmonious blend.
Step 4
In a bowl, lightly season the sliced scallions with 1 Tbsp of sesame oil, a pinch of salt, and a pinch of pepper. Heat a small amount of cooking oil in a pan over medium heat and sauté the scallions until they soften and become slightly golden brown. It’s important not to overcook them, allowing the natural sweetness of the scallions to shine through.
Step 5
Arrange the sautéed scallions around the edges of the bread slice, forming a ‘wall’ about 2-3 cm high. This barrier will help contain the egg and create an appealing presentation once baked.
Step 6
Carefully place the prepared bread onto your air fryer basket. Gently crack the fresh egg into the hollowed-out center of the bread. Be cautious not to break the yolk.
Step 7
Preheat your air fryer to 160°C (320°F). Place the toast inside and cook for 15 to 20 minutes, or until the egg is fully cooked and the bread edges are golden brown. The cooking time may vary depending on your air fryer model, so keep an eye on it.
Step 8
Finally, lightly sprinkle a pinch of red pepper flakes over the finished Scallion and Fried Egg Toast. (Optional) This adds an extra layer of flavor and visual appeal. Remember to monitor the toast during cooking and adjust the temperature as needed to prevent burning. Enjoy this delightful toast while it’s warm!
