Scallion Pork Stir-fry (Jeyuk Bokkeum)
Baek Jong-won’s Jeyuk Bokkeum Recipe Featuring Abundant Scallions
A true rice thief! This dish is packed with the aromatic flavor of scallions, creating a perfectly sweet and spicy stir-fry.
Main Ingredients- 500g Pork shoulder or butt (or pork belly, neck, as preferred)
- Generous amount of scallions (approx. 2-3 stalks, cut into large pieces)
- 2 Korean green chilies (adjust to your spice preference)
- 1/2 Onion (thinly sliced)
Seasoning- 2 Tbsp Gochugaru (Korean chili flakes; you can mix fine and coarse if you like)
- 1 Tbsp Minced garlic
- 3 Tbsp Soy sauce
- 3 Tbsp Sugar

Cooking Instructions
Step 1
First, wash the scallions thoroughly. Cut them lengthwise in half, then cut each half in half again to create large pieces. Using plenty of scallions significantly enhances the flavor and makes the dish even more delicious.
Step 2
Thinly slice the onion and thinly chop the Korean green chilies. Prepare a pan and place the pork slices in it. Turn the heat to medium and start cooking the pork.
Step 3
Chef Baek Jong-won’s recipe uses whole garlic cloves, but if you don’t have them on hand, substituting with 1 tablespoon of minced garlic will still yield a delicious result. (If using whole garlic, slice it thinly.)
Step 4
Once the pork begins to cook, add 1.5 tablespoons of sugar and stir-fry it with the meat. The sugar helps to remove any gamey odor from the pork and adds a savory depth.
Step 5
Pour the 3 tablespoons of soy sauce along the edges of the pan. Allowing the soy sauce to caramelize slightly with the heat of the pan will deepen its flavor.
Step 6
Once the soy sauce is well incorporated with the pork, add the prepared large-cut scallions and sliced onions. Stir-fry until the scallions and onions become tender and slightly softened.
Step 7
Now, add the spicy gochugaru (2 tablespoons) and about one cup of soju (or water) to help deglaze the pan and add another layer of flavor. (Alternatively, you can use 1 tbsp fine gochugaru and 1 tbsp coarse gochugaru).
Step 8
Continue to stir-fry over medium heat until the pork is fully cooked and the sauce has thickened to your liking. Stir occasionally to prevent sticking.
Step 9
Your delicious Scallion Pork Stir-fry is ready! Serve it over hot rice, mix it all together, or wrap it in lettuce leaves for an amazing meal. Enjoy!
