Ingredients

  • 3 cups Haengseo White Rice
  • 1 cup Haengseo Sticky Millet
  • About 20 fresh Scallops (live, in shell)
  • 1 Onion
  • 1/2 Bell Pepper (any color, or one of each)
  • 2 Korean Green Peppers (or 1 Cheongyang pepper for a spicier kick)
  • 1/2 Zucchini
  • Unsalted Butter (as needed)
  • 1 Tbsp Grapeseed Oil
  • 1 tsp Minced Garlic
  • Chopped Onion (about 1/4 cup)
  • Pinch of Black Pepper
  • Pinch of Salt

Cooking Instructions

First, rinse the Haengseo white rice and sticky millet together. Let the rice soak for about 10 minutes for a chewier texture. Place the rinsed rice in an electric pressure cooker, add 3 cups of water, and cook the rice using the ‘white rice’ setting.

Prepare about 20 fresh scallops. These scallops don’t require separate purification, so simply rinse them thoroughly under running water. Gently wash them to remove any debris attached to the shells.

Let’s prepare the vegetables for the fried rice! Chop 1 onion, 1/2 bell pepper (using different colors makes it visually appealing), 2 Korean green peppers (or 1 Cheongyang pepper for spice), and 1/2 zucchini. Dice them into uniform pieces, about 0.5 cm thick. It’s helpful to think of them as finely diced rather than coarsely chopped, so they cook evenly.

Now, let’s stir-fry the ingredients that will add flavor to the fried rice. Heat an appropriate amount of unsalted butter in a pan along with 1 tablespoon of grapeseed oil, 1 teaspoon of minced garlic, and the chopped onion. Sauté over medium-low heat until fragrant. Add the fluffy rice and 1/2 teaspoon of oyster sauce, stir-frying until well combined and seasoned. The key is to ensure the rice grains are separate and not clumped together. Once the rice is sufficiently stir-fried, add the previously sautéed scallop mixture and the zucchini. Give it a final light toss to combine everything.
