Essential Ingredients- 8 cleaned scallops
- 1/3 cup soju (for removing fishiness)
- 2 servings of fresh kalguksu noodles
- 3 cups anchovy-kelp broth
- 1/4 onion, thinly sliced
- 20cm green onion, thinly sliced lengthwise
- 1/8 carrot, thinly sliced
- 1/6 zucchini, thinly sliced
Seasoning Ingredients- 3 tablespoons Korean soy sauce (guk-ganjang)
- Pinch of salt (to taste)
- Pinch of black pepper (to taste)
- 3 tablespoons Korean soy sauce (guk-ganjang)
- Pinch of salt (to taste)
- Pinch of black pepper (to taste)
Cooking Instructions
Step 1
In a wide pot, combine the cleaned scallops, 3 cups of water, and 1/3 cup of soju. Adding soju helps to eliminate any potential fishy odors and enhances the natural sweetness of the scallops.
Step 2
Bring the pot to a boil over high heat, uncovered. Boiling without a lid allows the broth to concentrate and develop a richer flavor.
Step 3
Once the scallops start to open their shells, carefully remove them from the pot and set aside. This prevents them from overcooking and becoming tough, ensuring a tender texture when added back later.
Step 4
Pour the prepared anchovy-kelp broth (3 cups) into the scallop-infused water. Combining these broths will create a deeper, more complex flavor. Return the pot to a boil.
Step 5
As the broth begins to boil, stir in 3 tablespoons of Korean soy sauce for umami depth. Season with a pinch of salt and black pepper to your preference. It’s best to season gradually and taste as you go.
Step 6
Now, add the fresh kalguksu noodles, thinly sliced onion, green onion, carrot, and zucchini to the boiling broth. These colorful vegetables will add a delightful crunch and freshness to the soup.
Step 7
Gently stir the noodles to prevent them from sticking together as they cook. When the kalguksu noodles float to the surface, they are cooked. Continue to simmer for another 1-2 minutes to ensure they are perfectly tender.
Step 8
Finally, return the reserved cooked scallops to the pot and simmer briefly for another minute or so. Once the scallops are heated through, turn off the heat. Enjoy your incredibly delicious and satisfying Scallop Kalguksu!
