Ingredients- 4 medium potatoes
- 2 slices of cheese (e.g., American cheese)
- 1 handful of mozzarella cheese (approx. 50g)
- 1 strip of bacon
- 2 tablespoons canned sweet corn
- 1/2 small onion
- 4 button mushrooms
- 2 tablespoons store-bought tomato sauce
Cooking Instructions
Step 1
First, wash the 4 potatoes thoroughly. Slice them into half-moon shapes about 0.5cm thick. Place the sliced potatoes in a microwave-safe dish, cover with plastic wrap, and microwave for 4-5 minutes until tender. This will make them easier to mash.

Next, set aside 8 potato slices (about 1 potato’s worth) to be used as toppings. Place the remaining cooked potatoes in a bowl.

Mash the potatoes in the bowl using a fork or potato masher until smooth. For flavor, add a pinch of salt, a pinch of sugar, and a little pepper using a coffee spoon, then mix well. (Adjust amounts to your preference.)

Add 1 tablespoon of sweet corn to the mashed potato mixture (reserve the other tablespoon for topping) and mix well. The sweet corn enhances the richness of the potatoes.

Now, add a handful of mozzarella cheese to the mixture to give it a chewy texture, and mix thoroughly with the mashed potatoes. The cheese will melt and create a delicious base.
